I am so with Rachel about those baby carrots. No flavor either. I always buy loose carrots, I pick them out 1 by 1, and use them in what I cook and bake. And they are much better tasting raw for hummus it dipping or just by themselves. Rachel is a wonderful teacher and presents so naturally. Love her and her delicious recipes! So glad I found her channel!! ❤😊

So..... I came looking for a really great chicken Tortilla recipe. I couldn't find the canned version that I love so much. What I found, was a nice lady, that makes me feel like I am right there in the kitchen with her, and makes me feel like a sister or a family member that needs some learning in the kitchen. I will be back. Im hooked.

Hello Rachel and Ron. We made 2 very large pots of this soup for the 4th of July. My grandsons are starting to add more items to your recipes. They wanted black beans, more corn, lots of heat, bell peppers and zucchini. They made sliced corn tortillas to go in the soup. The soup was a huge hit at our 4th of July neighborhood party. What I really wanted you and Ron to know is that many of my neighbors come and ask who Rachel is. How do we know you. They thought you were a wonderful aunt to my grandsons who comes and teaches us to cook good food. We show them your videos on KZbin. Thank you again for all this good food. Rick Rivera and kids.

I’m new to your Channel, l’ve only watched about six of your videos... I loved this recipe but more importantly, l admired the way you kept referring to your husband, “My Ron”. I was tearing up watching this, it’s the anniversary of my Husband’s death today. I lost him suddenly to cancer. I never let a day go by in the 38 years we were married without letting him know how much he was loved. So, l hope you and “your Ron” live a long, happy and healthy life. You seem like such a sweet woman and I love watching your Channel. You’re just so warm and caring. Take care. ☺️

Years ago, I lived in Redondo Beach, in southern California, where I'm from. My boyfriend, who is from Guadalajara, had his family come visit us for a couple of months. Omgosh, the cooking that went on!! I learned so much from them, and it was the best food I'd ever eaten-ever. Recipes I'd not really had before because most Mexican restaurants back then catered to the American appetite. I will carry the many recipes they taught me over those couple of months. Rachel, you remind me of those time's. You are an excellent teacher, and very sweet. I could hang out with you all day! Thank you for sharing your recipes with us. 🙏❣️ Bless you and your family.

@@julieswahn9887 ~ Some people add corn tortillas in kind of toward the end of cooking time. I’ve added them in towards the end of cooking time. But, it then gets kinda mushy. Some people like it that way. I think it’s a personal preference. Or, you can do what Rachel did and add them as garnish. Heck, I’ve even used Fritos in a pinch. Lol! I like Rachel’s version a lot and am even going to try her recipe! Love, from Tejas! 💜 P.S.~ I added Fritos that time to thicken the soup but decreased the salt. It was really good! Play with it. 🥰

Your videos are the best ever seen. My question? Can you someday cook some low carb dishes, I'm diabetic and would die if I'd eat all those wonderful dishes you make. You are the best.❤️

Hi Rachel, I came across your channel just today! I was looking for a recipe on the power xl smokeless grill and I bought some pork tenderloin that I wanted to try on the grill and for some reason you came up. I think it was the enchilada casserole. Enchiladas are some of my favorite Mexican foods that I was introduced to when I came to live with my sister in Arizona when I was only 12 years old. I am from Brazil and I had never eaten spicy food or had a tortilla in my life until I moved there. It was a very desolate place, Globe, Gila County, Az. I learned to eat the real made from the illegal street vendor that carried his burritos in a gym bag on the curbside on the outskirts of town. I went to live in an Apache reservation because my brother in law’s father was a ranger there. It was also my first contact with native Americans. Anyway, Rachel, as you can see I do appreciate making fresh tortillas and the works. In Brazil I attempted to make burritos and everything was from scratch. It was hard work but very authentic. So now I can learn some more jewels from your cuisine. Sorry my story was so long, but I wanted you to know how much I appreciate your teaching skills. It’s great to just watch you cook. It’s like coming over for a visit. Thank you for doing that. You cook your cuisine like I cook Brazilian food. I don’t have recipes, I just cook them as I go.
