Ingredients
1boneless skinless chicken thighs
2 cups day old jasmine rice
2 medium yellow onions, chopped
1 bunch scallions, chopped
3 large eggs
1/2 cup fresh carrots, diced or shredded
3 tsp avocado oil divided
2 Tbsp unsalted butter
4 Tbsp soy sauce, divided
4 tsp oyster sauce, divided
1 tsp sesame oil
6 cloves minced garlic or 1 Tbsp garlic paste
1 tsp ginger paste or minced ginger
Salt and pepper to taste
1/2 tsp chili paste, optional for spice

Ooohh I make fried rice allll the time but I’m gonna try this chicken. Also how you cut your carrots, I’ll try that for a new texture. Normally I use frozen peas & frozen corn, but then fresh diced carrots & steam those together (under the frozen bag instructions) before adding to the rice. I love that hack as it makes your carrots more flavorful, less watery, and more nutritious! Hope someone gets use out of that!
