I've tried making this over the years without success. I'd try black bean sauce that comes in the jar and it never was even close. Recipe websites? Helpful advice in the Asian stores? All clueless. Mandy is the only one that gets it right. We ordered the black beans using the link above and made this as soon as our box from Amazon came today. Presto! It tastes exactly the same as in the finest restaurants! Thank you Mandy. Our quest is over. :)

Hey all...I doubled everything and instead of the magic ingredient (black beans...had none available) I used curry power instead...OMG...what a great tasting Chinese style beef curry...I will keep this one on rotation...(BTW...I love the ant)...much love from Toronto, Canada!~

The jarred stuff is a lot saltier, that's why she was able to add in soy sauce. If you were to do this recipe with jarred black bean and used the amount of soy sauce she did it would be SO FREAKING salty that it's inedible. I've used both the dried fermented beans and the jar stuff, the dried gives you the better flavor overall. I still use the jar stuff because it's what's available, but growing up my grandma always did it using the dried beans (she's Cantonese Chinese), the flavor is a lot cleaner and more distinct. She'd soak them in a bowl of warm water for around 30 minutes, drain, and then mash them with the back of a spoon. This also removed any extra salt so it makes it easier to season to taste, it just gives you that delicious slightly fermented earthy flavor. It's good stuff, I just wish it was available in more places.

I just cooked this. Thanks for sharing detailed recipes. I added brown sugar to the beef marinade. Also added some sliced ginger, red chillies and another half TBS sugar into main dish. Turned out so yummy. Ate extra white rice with it. Drool!

I made this for lunch with flank steak but since I did not have any black fermented beans, I used a bit of my Korean black bean paste and added just a tad of brown sugar in the sauce (because it was a bit saltier due to the paste). It turned out really really well

I haven't tried this recipe, but I did just make a different one for dinner tonight, using your instructions for marinating and frying the beef. The results were amazing! I've never been able to make beef that tender, yet well browned, in a wok before. Thank you so much for sharing not just your recipes, but all your tips and tricks as well.

I made this dish for dinner tonight, and it was a huge hit. At first I thought it would be too garlicky or too salty, but it was perfect. My children thought it was amazing as well. The only sad part about this recipe is you will not have any leftovers because it’s so delicious. I used bell pepper, fresh green beans, carrot, sweet onion, crookneck squash, and celery for vegetables, but aside from the choice of vegetables, I followed your recipe exactly. The fermented black beans are funky and salty, but they work really well with the beef. Thanks so much for such an easy yet flavorful recipe. Keep up the great work!

I was looking for a quick recipe that used ground Turkey b/c I didn't have any beef. I also used bok Choy, carrots & red bell pepper. Also, I only eat kosher so I had to find a substitute suitable for oyster sauce. I found a vegan hoisin sauce in the international Asian grocery store & used a 1:1 ratio. Anyway, even with all the changes this made the absolute BEST Chinese carryout. I'm serious about this. My son agreed & started asking me questions about how to make other dishes like I own a restaurant. Lol! Thanks for your help.

Cool seeing you use the dried fermented black bean, that's what my grandma always used in her cooking and it's so much better than the jarred stuff which is way too salty. She'd soak it in warm water for around 30 minutes then mash them up with the back of a spoon. She made the best steamed black bean spare ribs. Love the simple recipe though, I learned some of these stir fry methods through trial and error, had lots of soupy stir fry until I figured it out. Very easy to understand and follow to make good Chinese food at home.
