I finally got around to making this today along with vegan ribs and some collard greens. I made one mistake; I didn't make my plate before I went set the food out. These folks inhaled everything. All they left was a corner of the Mac n cheese. The folks who swear they don't eat mushrooms loved it and didn't know it was mushrooms. That's a win in my book. Thanks Brit! ❤

I sprinkled FYH parm on top and broiled and added white cooking wine like 2 tbsp to give it a cheddar bitterness THIS RECIPE IS SOOO GOOD!!

This is similar to the way that I like to make my vegan Mac & cheese. You can make your vegan cheese sauce taste a little more sharp or slightly more like medium cheddar. Just add a tiny pinch of Kosher Sour Salt or a small splash of Lemon Juice. I noticed that you have a lot of delicious looking seafood recipes. Seafood can be tricky for some vegans to replace and still taste authentic. So I’m definitely going to try this recipe and your other seafood recipes too Sis! And I’m also a new subscriber. I made this last night and it was so delicious! I end up packing 3 to-go plates to deliver after 10pm to my folks & showed up at their doors like heyyyy y’all have to try this! And everyone lovvved. I’m excited now bc it gave me some hope, like ok, I can do this no dairy thanng. I did a few tweaks, added old bay seasoning, and creole seasoning vs Cajun and omitted the shrimp... thank you sooo much girl

You know what I like to use as a special somethin? MISO! It's such a flavor bomb and a little goes a long way. I have a feeling it would taste good in this. In lieu of the veggie broth, mix miso paste and water. I also use it to make "cheesy" grits. Try it!
