As a first-time biltong maker, I am so impressed by this video. I was looking for a recipe that didn't include sugar because I'm diabetic. This recipe has no sugar in it and from what you've told us, it seems that it's not a traditional method to add sugar in. Once again you just made this nice and simple and that really impressed me. I live in the U.S.A and love finding new food ideas from across the globe. Well, this caught my eye as a possible candidate, so I gave it a try. I am thrilled that I did! I became an immediate addict and enjoy a bit of it every evening. Unfortunately, my wife isn’t very adventurous. I haven’t built my drying box yet, so my wife doesn’t appreciate that I simply hang raw meat on hooks under my desk in my office to dry. However, she loves the smell in the house when I do it, so that kind of evens things out. I’m very keen on springing new foods on guests and they are always looking forward to my next trick. I can’t wait to spring biltong on them. I suspect this will be a winner with them too. Thanks for a great video!

Back in Zambia after my dad with his hunting buddies would come back with buffalo, kudu and eland mostly. Everyone was involved in the process of making biltong. It was hung on the stoep, which ran around the house, (enclosed and with mozzy netting all round). Biltong is a part of our culture. Life is not life without biltong!

I'm married into a Rhodesian family and so glad to have been introduced to biltong. I soak mine in red wine vinegar and worcestershire for 24 hours already sliced, heavily spiced and dried until it's dead. You get the wine and godly spice favour that just keeps giving. Everybody wants to be your best friend when you've got biltong

Juist made a 3.5 kg batch of biltong! I used your method of making my own spice which in itself was really enjoyable. My children were fascinated with the pestle and mortar to grind the spices! The biltong looks, smells and tastes heavenly. Very worried about how short this batch will last before I have to visit my butcher again! Thanks for your great video.

Kia Ora! Kiwi here as well but married to an Afrikaner. If you ever find yourself on your way to Wellington or live near, there’s a shop called ‘South African Pantry’ in Paraparaumu. They sell absolutely amazing biltong, chilly bites and droewors. Would also recommend buying borewors sausage 😂. Baie baie lekker biltong.

I followed your recipe , just put all spices in. Tasting @ day 5 I took the thinner piece out ( I cut mine a little too thick ) By the time I was done test tasting it was gone . It was about the same as you like yours Im leaving the others in a couple more days to get them the same. I just dried in my house in a cardboard box no fan , between 68 f anfd 73 f. I placed an order for 2kg of beautiful, organic, grass-fed Irish beef today, to be delivered on Friday. I was going to make beef jerky, my first time. As I researched beef jerky recipes, loads of people commented that biltong is much tastier. So I started researching biltong recipes. This is my second video and I absolutely love the vibe! The content, the comments, the accent 😁 it's just a completely different world from the beef jerky videos. Sooo, a change of plans! I'm now gearing up for my first attempt at biltong 👍 A quick question, I bought 1kg of eye of round which I know is suitable, and I also bought a kg of sirloin - will that cut work as well? The eye of round should be fine, as the grain runs the other way 👍 Great to know you use sirloin quite often, I imagine the fatty bit at the top is heavenly 🤤☺️ It's interesting how all of the beef jerky makers (that I've seen) chop off the fat, while the biltong makers have a special appreciation for it, which I find so relatable! I can't quite believe that it turned out so good - some of the best I've ever tasted, and I've been to SA a few times so I know what it should be like. Literally on day 4 with my batch, can't wait for tomorrow. Weekend and biltong...doesn't get much better. I spice my meat for a few hours before adding the vinegar that way the spice flavor pulls into the meat.

It turns out I like Day 3, I didn't really know the process, I always just asked for "Wet Biltong". We used to take game meat and hang it outside with salt when we were kids, the taste wasn't great, but it resembled Biltong.🤠🇿🇦🇿🇦🇿🇦

At $90 a kilo in Australia I thought I am not paying that being a tight arse Dutchman so I bought 4 kg of silverside for $33 which should make 2kg of biltong.

Great Bar Bru! Over here on the West Coast of the South Island of NZ its aautum with cooler weather, so I am making a batch myself from a nice big red deer hind I shot a week ago. It has no fat on it, but its some of the most tasty meat I have ever eaten. Its not gamey like Kudu or Springbok, but not as sweet as beef. I like it a bit soft as its more tender that way. Sadly we have no chance of swigging a Windhoek with it, so Im making my own home brew to compensate. I really like your bar!

As a kid it always felt like the biltong was hanging for months before we could eat it, especially the Rooibok and Kudu which we preferred really dry.

That problem was solved when another guy just said: It will be "Wooster sauce!" My dad used to hang our biltong in the garage. When ready, he used his sharp pocket knife( knipmes) and with precision he will cut a piece of about 5cm into thinner slices,but not all the way down.Then it was handed to each of us around the table.We ate it with brown bread and real butter.Then he will repeat the process, till we all had a good share of the biltong!!We always silently wished for just another piece!!Sometimes we will put pork lard ( my mother made it ) on the bread with salt and pepper and Lyles (the green tin) syrup on top!! Heavenly !Simple, real food.

I hope you're enjoying that beer. Doing my very first batch of billtong, 4kg of silverside. Unfortunately, I cut across the grain it was so hard to tell which way it was going. It seemed to swirl. anyway, I don't think it is the end of the world. I added a little garlic powder and some fennel as well. I am at day 3 using a 50watt globe and fan at 21deg C it looks lekker already. foot note. I brined for 24 hours.

As an Australian I would kill for Biltong. I used to be able to buy it in certain Delicatessens, but I've moved out of cities, and its extremely hard to come by and expensive...but my South African doctors do make it. He won't part with it either.

I just tried my own after watching several videos. Yours is the best though, and I've copied you as much as possible after watching your video several times. My biltong has been hanging for about 26 hours now. Its gone dark, but its still quite wet. I've cut a side off the box and put a dehumidifier there to suck the moisture out. I could not find an incandescent bulb for love nor money... Hopefully my biltong will be ready by saturday or sunday. It boggles my mind that we never ever tried to make our biltong growing up in KZN.. It was always an expensive and rare treat.

@@XmanCo Cheers, thanks for the reply. Since then I've made a box similar to yours. I managed to find some bulbs in a small independent hardware store so I have spares. The box works an absolute treat. Its just matter of getting everything right and finding the right silverside joint. I'm loving having my own home made biltong. Thanks again for your video, its definitely the best easiest I've found to follow.
