In Bengal we call it Kankrol. We simply fry it's thin discs in sarso tel with some salt and kalo jire and that's all! Tastes wonderful with warm ghee bhaat

This vegetable also used in Dalma of Puri Jaganntha temple, this vegetable grow in wild. There is nice story with Lord Jagannath regarding this vegetable spine gaurd (Kankada called in Odisha). Great effort chef. Gratitude from heart 🙏

@@namangautam227 Rather its not a story its History. Jagannath Temple is attacked and looted by Moghul invader many times. Servitor used to sneak into various places with holy deities. There is islet in chillika Lake where all the deities kept hidden from moghuls looters. Servitor need to offer prasad to deities, fortunately that islet have majorly grown with spiny gaurd (kankada) in wild. Out of limited resources servitor offer kankada as an vegetable. There on Spiny gaurd included in Naivedya of Lord Jagannath Prasad. The looter was Taki Khan who attacked and looted temple property during 1730-31. That islet still there in midst of chillika lake called "Nairi Kankan Sikhari"

Chef Ranveer bhai, this is great. Thank you for this delish no-onion-garlic veg dish. It is simple everyday dishes like this that we need today more than the rich royal ones because it is dishes like this that can be eaten daily and keep us healthy. We have seen enough fancy dishes, and those are fit for festivities. But everyday food should be equally celebrated otherwise, they will get lost in distant memory. 5-star for this recipe.

In Bangla it is called “Kakrole”. I make beautiful bhaji (stir fry) of it! You are the first person ever who showed the recipe with this vegetable. Appreciate. Yesterday I watched the video you were in the Kapil sharma show with sanjeev kapoor and Kunal Kapoor. Liked the show a lot.

Love it in kolkata it is called kakrol n i cut it in thin slices n diced potatoes n fry onion slices ,red chillies in mustard oil n fry it a golden brown . ❤ it tastes delicious in plain rice ( or dal) or drizzle gawaa ghee on d rice . Just try it ❤

Ghee me jeera, sukhi lal mirch dal ke kantola dal dijiye. Usme thoda salt, haldi, milk, little sugar dal ke pakaye. Thode der bad iron tawa me ghee dal ke fela dijiye kantola ko. Crispy hone pe chawal ke sath khaiye

In Assam, we call this as Bhat Kerela and we cook simply with potato + salt + turmeric + coriander + cumin... We even cook this with certain fish as curry..
