And then we have restaurants like Jack's Waterfront where the owners assume if they keep everything the same as what the old owners had (while bringing down the food quality) the people will keep on coming back no matter what. As a person who lived in that neighborhood and used to go to that restaurant when the original owner had it, the new owners pretty much shot themselves in the food with that ideology. As Gordon had said in the La Parra de Burriana episode - don't piss off the locals.
