Looks like a solid Cuban. I'd offer two things. 1. Increase the hydration of your dough, pan cubano is pretty airy. 2. The lime/OJ mix is a fine substitute but if you have access to sour oranges....thats the ticket.

It was great! My yeast was a little old so it was a little denser than I care for but I’m sure with good yeast it’d be as close as you can get to the authentic stuff at home. Unless you practice for hours and or know the secrets to Cuban bread.

You did a great job and I approve. 🇨🇺 🥪 ❤️ If anyone is wondering, traditional mojo is made with sour orange juice- no zest- but using half lime and half orange will taste very similar, and is something many Cubans do. It isn’t made with chilis, cumin or mint. We use onions instead of shallots and dried oregano instead of fresh. Your sandwich assembly is pretty spot on. The most traditional way is mustard on one slice and butter on the other. This looks VERY tasty and like an elevated Cuban sandwich.

Shallots are better for marinade then Onions as they do not have the strontg onion spell but still contain all the wonderful onion flavor. Im puertorican not Cuban but that change to the Mojo was fine. My gripe was that he removed the bone fromthe pork, just butterfly the meat open and keep the bone in as it releases alot of flavor.

My uncle is Matt Salgado, a scarcely know Cuban chef but even Bobby flay has had him on his show. And this is perfect. Exactly how he’d make his besides putting a palm leaf in the split for the bread. Makes a world of difference. Also a little mojo in the pan while toasting so the bread absorbs. Love u man.

I don’t know if anyone has mentioned this, but you get a better, more balanced flavor if you put the Swiss directly on the mustarded bread and place the pickles between the cheese and meat. This separates the acidic ingredients by a layer and actually makes a huge difference. Source: grew up eating Cubanos my entire life and the best places always did their sandwiches this way.

I used to eat cheese and mustard sandwiches when I was a kid. I agree that layering is everything. Very picky, with my sandwiches and burgers. Mustard brings out the cheese. A dab of ketchup livens up the tomato. I never tried this sandwich. Must make. I will look at few recipes.

As a Cuban myself , I think your sandwich looks very good. The pull pork or shredded pork version is something that was created here in the US. When I lived in Cuba , the Cuban sandwich always was made with slices of roasted pork leg.

It’s one of my favorite sandwiches. In the world. I’m from Louisiana and Tennessee. I know a little about sandwiches. The bread is as important as the pork. It’s like getting a shrimp Po-Boy in Metairie, using that Leidenheimer bread. I spent three days in NO trying to find the right bread. Had to drive to Bear’s to get it. Completely worth it. Real Cuban bread has a three hour shelf-life, just like that Po-Boy bread. It matters.

As someone who grew up making lechón several times a year, but especially on Christmas Eve (aka Noche Buena), Josh’s mojo recipe is pretty spot on! Obviously every family makes it a little differently, but mine 1) uses white onions instead of shallots, 2) does NOT use mint (that’s for mojitos smh), and 3) makes it in a food processor instead of a blender, so it’s still a little chunky. Also, if you live someplace where you have access to sour oranges use those! The lime and orange juice is a substitute for people that don’t have sour oranges, since they really only grow in tropical climates.

Cuban here. We sometimes use *more* lard, and get that bread super soft, if all you're looking for is Cuban bread. And if that's the case, you want it to melt in your mouth. It's delicious. Just watch out for heartburn... and also, it's very easy to go through one or two rolls on your own, so make sure to take it easy with that 😅

I had a Torta Cubana last time I was in Mexico, it was delish, crusty crunchy toasted bread and very rich in ingredients. Love ❤️ that you included the bread 🥖 recipe. The right bread makes a BIG difference.

Being a Cuban American from Miami.... This looks pretty authentic minus the sour orange but they are hard to find. I like his quick Cuban bread. Usually you make a starter 12 hours ahead of time but this method looks great too! Nice job Joshua

I'm a purist; I grew up in Florida and spent half of my 20s there and I honestly consider the Cuban a State staple just like Georgia does it's peaches, so I *want* to take a fat dump on you. But god damn it, I can't. That shit looks tasty and you made a phenomenal sandwich. And the fact that you're making it accessible to everyone is awesome. This video was as fun and insightful as the rest of your videos are. Keep up what you're doing; it makes cooking at home fun and helps a lot of young people with budgeting / saving money. I always look forward to your videos!

Great job! As a Cuban I know how great Cuban sandwich’s taste. Here is how we make mojo , garlic , salt, pepper , and oregano. Also add naranja agria ( sour orange) that’s all it takes. The amounts are to taste but the mojo should taste salty to marinate the meat. Great job as always

I'm a Key Wester. This looks like a Cuban Mix sandwich; a local must eat. The midnight is pressed. White Street used to smell like Cuban Bread every morning and the smells battled with the Cuban bakery where treats were made early in the morning. Guava and cheese filled the island around five in the morning mixing with jasmine fragrance from the plants that bloomed all night. Cafe Con Leche or Bucci to wash down a Cuban Mix and... wow!

I’ve live in Miami my whole life (just turned 44). I’ve never seen brown Cuban bread. It’s always blonde colored. I have memories of going to the corner Cuban bakery early in the morning to get fresh baked Cuban bread, croquettas, y papa reinas. Also, I’ve roasted pig on noche buena many times. The best method I came up with was to marinate a 40lb pig two days before. You make the mojo sauce and seal it in a bag with the pork. You just set it in a cooler full of ice and check on it occasionally.

I made this sandwich!!! I just used chicken instead of pork because I don’t eat pork!! It came out great! I’m super happy I made pickles, chicken, and bread from scratch! Probably not the only one, since we are on the internet and talking thousands of people, but i would guess you are in a minority. Most people that follow modern YT cooking channels like this guy or Babish or Internet Shaquile (im sure tjere are others) have seen Chef before. It is more popular than most YT channels, after all
