I’m italian and in Italy this is a pretty common dish. We make it when we are tired, don’t have time to cook something more “complicated”, or when we are with the boys at midnight and we get hungry. I assure you that it’s easy and delicious. P.S. add salt when the water reaches the boiling point, or you could ruin your pot! Heat spreads easier through solids, so the salt grains at the bottom of the pot heat up fast and in the months the bottom of the pot could be damaged!!

just a tip when cooking the garlic make sure the heat is low or medium not high as the garlic will burn creating a bitterness. But Babish you've done it again great video.

Technically you're supposed to start off the oil, pepper flakes, and garlic while room temperature, so they both slowly come up to temp together. It's supposed to make a more flavorful and aromatic oil.

try to add some bread crumbs that you have previously stirred on a pan with VEEEERY little oil and/or in the oil and garlic pan add some small sardines (not dried, the ones in oil) the sun dried tomatoes are actually one of the plausible additions to this recipe, so please do. Flake them and add in the garlic and oil pan when the garlic is almost done

So I have a story with making this that isn't a "I didn't like it, but I left out an ingredient" situation. All the ingredients were in place, but there was a toddler in the mix. I'd made it for my cousin and her husband since they're vegetarian, and I knew it was perfect for them. But with all the mix of flavors popping around, I was concerned their one year old wouldn't be a fan. Now, my cousin and her husband loved it, and for a bit, the kiddo seemed to enjoy what his mom was sharing. And then, the moment my cousin turned her head, he snatched a handful off her plate and ran away with it, stuffing it in his mouth. It was my proudest cooking moment, honestly.

College student with zero cooking experience here. Made this today and it turned out very decent! Learn from my mistakes though - You really have to spend time on thinly slicing the garlic. Even on my closest cuts were still quite thick with a vegetable knife. Scarlett would fall asleep by the time I finished properly doing 6 cloves - Even when you think you've diced the parsley well enough, do it again 1-2 more times. - I used too much pepper flakes so it ended up having more of a bite. Thankfully I like spicy food so it didn't bother me, but it might bother you so be careful. - didn't prep nearly enough pasta. Which is a mistake I seem to make literally every time I make pasta. Thanks so much for these videos. Even though I can't afford to make a lot of them, this was cheap, easy & delicious!

put the garlic under the side of the blade, smash down the side of the blade, and it'll be much easier to peel. With that method, 6 clove will take less than 2 minute.

The mandolin would be better than smashing it. The thin slices will give more flavor to the oil because they take longer to brown. If you mince the garlic, it will brown a little prematurely. The fact that they're larger than minced garlic shouldn't be a concern though, once browned the flavor is much more mellow.

You can more or less use your thumb and index finger as a meassure of servings for pasta. By making the "all right" symbol (holding your fingers together to form a loop) thats for like 4-5 persons i believe, middle of the thumb is for 2 roughly, at the base is somewhat single serving. The main reason you want to avoid pressing down here is because when you crush the garlic you lose those slices intended for this design. You need a harder and smaller container for the shaking trick but it works at least half the time in my experience.

One of my go to recipes since this was uploaded. You use dried herbs, canned minced garlic, and bottle lemon juice still good. You use freshly sliced garlic slivers, one half a lemon, your on freaking good. I can only imagine adding fresh parsley will one up the recipe again! This recipe with it's simplicity really shows me the value of fresh versus dried or canned ingredients on flavor of the final dish.

For anyone wondering, yes, it still tastes good with dried parsley (just add less, because dried herbs are stronger than fresh). I'm sure fresh would be better, but I made this because I had the ingredients on hand. Jon Favreau, was sadly not here, either.

After the 4th time trying to make this dish, i can finally make it without it being too oily and burnt garlic. Also for anyone making this and it tastes bland, one of the comments in the comment section said his/her italian grandpa suggested having a little fish sauce in there. IT WORKS! Immediately bring up that taste in the dish! You guys can also cut back on the salt for the fish sauce if you think it's too salty.

I just made this, my sweet baby lord, holy hell! Using the best olive oil and pasta you can find and youll have greatness. I did however add grana padano. Excellent. The garlic was sweet and buttery. The lemon and parsley together? They're like bffs. Everything worked well so well with each other. I am very pleased. Thank you.

I just made this AGAIN and added sun dried tomatoes with the garlic so the oil can "rehydrate," them and I am not upset in the slightest. Kudos to me and you. Also added basil with the parsley, another great idea. If you need me ill be in a coma.

No More KZbin Money Symbol Generater it sounds retarded but when it come to ingredients, price usually indicates quality. You will rarely pay top dollar for ingredients and get poor quality. Especially when the ingredients are inside a glass case where you have to ask staff at the store to get the ingredient out for you.

I have tried that gralic shaking thing too, but it never seems to freakin work! Try to press the garlics with a knife against the chopping board and then peel. So much easier!

*For anyone that struggles with peeling garlic,* Lightly crush it with the flat of your knife, then start peeling *from the root.* If you try to peel it from the other side, the skin will split and you end up trying to pull dozens of tiny bits of skin off of the clove, where as if you peel from the root, the skin will usually come off in 2-3 large pieces.

Agree on the cheese! And it's really important to use GOOD olive oil. Also use fresh peppers, and add the sliced skin of the red pepper into the pasta for some color.

I just made this dish and it is incredible. I will definitely be making it again in the future, but it was just amazing. Something to not from my experience is use the parsley somewhat liberally and be careful with how much red pepper flakes you use. Also make sure you season before serving with salt and pepper. Other than that, follow the instructions in the video and you are sure to impress everyone with your cooking.

Thirded. Red pepper flakes are easy to overdo in Italian cooking. But then I feel like you get to a point where you can't make it REALLY hot with red pepper flakes alone. Kind of a strong bell curve around Medium Hot, I guess (medium for me, that is). Which is perfect for me I guess since that's right where I like spicy food most of the time. I just have to tone it down for others...

There is a balance between the oil, garlic and parsley but to each her own. It didn't seem like he was using too much to me, actually; it is essentially the sauce. Compared to Szechuan food, this is nothing. Just use some nice bread to sop up any extra oil - it should be delicious with all the garlic cooked in it.
