My grandmother Assunta made it with fresh pasta made by her, and with the chilli pepper and parsley she grew in her home garden. We are from the Marche. To flavor the tomato sauce, she added carrot, celery and onion, but in whole pieces, to be removed later (and when she had them available, she also added free-range chicken feet in the sauce, always by her, for "the flavour"). A spectacular recipe.

@@Ramyapad19 There is no need to add mushrooms in this recipe: if you are vegan no problem, the chicken feet were an unnecessary addition (and in any case they are not eaten, they are removed after cooking the sauce), for the pasta " all' Arrabbiata". And for fresh pasta, we live near Campofilone, a small town famous in Italy for chitarrine (a sort of square spaghettoni) and pappardelle (similar to tagliatelle); the problem with fresh pasta is not the recipe, that is very simple. The problem is the experience in the kitchen that one must have to do it well. If you are not practical, it is better to buy a good quality pasta that can be found on the market (I certainly do not mean "Barilla", good quality pasta must be almost white in color, never yellow or worse still tending towards orange)

As a meat-based eater I would have this instead of stake 10 times out of 10. Give me some angry penne, or a bolognese (make it without the meat if you don't eat it) pappardelle any day of the week .. pasta is one of the best foods in the world, because it's an ingredient to create real magic.

When I've made this (up until now) I would include anchovies and capers - because, before I became a home cook and were buying sauces from the supermarket, they included both those ingredients. Making this tonight! Probably the pasta I make most often. I use a lot of Thai chilis, so at the very end I hit the pasta with ~2 tablespoons of mascarpone. Makes the sauce richer and a little less angry 👍 I use some fresh cherry tomatoes and a small can of Italian tomatoes, and whole wheat penne, it's super healthy and delicious.

I often make a version of this for a quick lunch it's it's wonderful in its simplicity and flavour. I use a cup of dried pasta, a can of chopped tomato's, a tablespoon of olive oil, a teaspoon of chilli flakes, crushed garlic, oregano, garlic salt, onion salt. Pasta goes on for cooking, everything else get flung in frying pan together on a medium heat, 15 mins later everything is ready, salt pepper to taste mix and eat. Perfect.

I made this yesterday, with the additions from a comment below ( added big chunks of onion, carrot, and green peppers while it was simmering, and then removed them before adding the pasta ). This was a fantastic recipe, super delicious! I used 3 jalapenos from my garden and a small piece of Scorpion pepper. Let me tell you, the pasta was angry that day, my friends!!! I have the leftovers for lunch. The only mistake I made was not removing the parsley stems and shopping it up finer.

Today was a hot day, so a good day for spicy food! Of course, I have eaten all'Arrabbiata before, but I never made it myself. I really loved the juicy and chunky tomatoes as well as a decent amount of chilli and garlic. Here in Germany, companies put very little of these ingredients into store products. I totally could taste the difference. Premade is okay, but this is two classes better. Easy recipe, all easy to find and inexpensive ingredients, done quickly and 100% worth the effort!

Garlic can be too overpowering and it might alter the simplicity of dishes. We don't resist garlic but it is only used for certain dishes we make. But you can always add garlic into your dish, at the end of the day... your satisfaction matters most.

Cutting the chili pepper is in the seeds. If you add them in it will be hot and spicy. Excellent recipe for a great dinner 😎

One of the easiest and fastest pasta dishes of all, and cheap and whose taste you don’t get sick of. I make it pretty much the same as this, except I add the parsley and mix it in a minute or two before the end so it’s almost fresh and just a little wilted. Oh, and I usually mix in more grated pecorino. Just on the whole peeled tomatoes thing; has Vincenzo been to any ALDI this week? They’ve been selling a food mill/passaverdura, if he doesn’t have one then I figure it could be something he’d find useful.

I’m making this now. I prefer Parmeggiano Reggiano, and I will add fresh basil. I love basil! Nice touch with the Flower Duet, the music accompanies the cuisine.

Some family friends have a trattoria where I live and they use red malageuta peppers for this and it's absolutely my favorite sauce because my two favorite cuisines are Italian and Mexican, and this is a great combination. I was wondering, have you've tried using other chiles such as fresh jalapeno, habanero, serrano, or others? Or any of the dried varieties such as ancho, or more smoky in flavor (oaxaca)?

If you add anchovies as well (vegans can add Ueru Wakame - Japanese dried sea-weed - to get a similar umami taste as with anchovies), then you end up with a spicy puttanesca suggo - care for a comment, Maestro Vincenzo ??? Cheers !!!

I make this recipe with cherry tomatoes and mix it to get a creamy sauce from the skins of the cherry tomatoes 🤤Then also I add chorizo or spiced salame.
