Don't expect anything you get from Blue Apron to look anywhere near as good as what he has. They send you dead ass Walmart steak about a quarter of the size of what he's using and the produce is from a bargain bin. No way was that the same product they send to everyone else. Source: I've tried Blue Apron, Hello Fresh, and Plated all for a few months each and the meat is just absolute shit quality.

I figured as much. I just drag myself to the nearest supermarket and get my stuff from there. When flush, I go to a butcher for my meat. Much better quality either way!

That's so sad. Hello Fresh and similar companies in Germany are amazing. From my personal experience, the veggies, dairy and all products are sourced from local farmers and producers unless it's an exotic ingredient for example. The farmers' names can easily be seen on the produce and I could go visit them to buy directly. It's such a shame that they're allowed to deny customers what could be a truly delicious food experience. Edit: typo, can't = can

That's an interesting Scotch egg. Every Scotch egg I've had or made has had a hard-boiled egg as opposed to a soft-boiled but it still looked really good.

I've tried to make hollandaise SO many times and failed miserably - I just finished my first successful eggs Benedict and I feel so excited to have finally done it (while watching your Hot Ones episode too, nonetheless!) :) thanks, Andrew!

Good job. That is not a traditional Shakshuka though. Shakshuka is prepared using garlic, Chili, red peppers, fresh tomatoes and spices. You gotta cook this for a while or over high heat so the water of the tomatoes evaporates and you are left with a thick acidic sauce. Only then you add the eggs and optionally a bit of cheese. This looks more like a simple vegetable fry

I think it varies depending on the county/region. In Tunisia for example, we use mire spice, more veggies, more greens (mainly chard) and might even add some jerky or sausages; and as you mentioned cook it for longer (not overnight though) and only add eggs in the last minute.

Iv been cooking a lot this year and one thing I have found is how easy it is to make restaurant quality food in the comfort of your own home. I always though more went in to alot of recipe but most seem to really boil down to quality ingredients and a bit of love.

The biggest difference between home cooking and restaurant cooking is speed and quantity. I've been a line cook for most of my adult life and one of my greatest joys is being able to slow down and really put some love into a home cooked meal.

J Shook cooking is not like drawing. You have to have time to find the ingredients, prepare the ingredients, and assemble it all together. After it all you have to wash the dirtied dishes. So after it all cooking is hard. He's trying his best to make the videos. You don't have to force him

The rate at which Andrew cracks jokes has been steadily increasing in the past few videos. I remember when he started out, we’d get 1-2 jokes per video at most, and now there’s like one every minute. I’m not saying whether that’s a good thing or a bad thing, just observing that it’s happening.

Chef John says, “wet hands make for happy balls”. If you wet your hands prior to enclosing the egg in sausage, you get a much smoother covering. I tried it, it works.

I think he has a filter over the video. If you look at the lemon the yellow on that isn't as yellow as it should be.

I've found that American eggs always seem to have really yellow yolks in comparison to the ones we get in Australia, which are really orange. It could be this plus what larelles said

The eggs in Australia are gorgeous. Amazing orange color. Here in America they're just pale-ish yellow unless you get them from a farmer.

depends on the quality of the egg, If I pay like 6 dollars a dozen, I can get super orange egg yolk eggs, if I am speding 1.99 for mass produced, then yellow. That said his are REALLY light yellow, I am guessing its both a filter and light yellow yolks.

It's probably a combination of not great eggs and the fact that he has a really weird filter on his main camera (maybe it's just the model) If you look at the video of his pizza (or anything else with tomatoes, or carrots for that matter) then you can see how with different cameras show the tomatoes as red whereas his main one makes the tomatoes look orange

Babish. My man. You've gotta be using wet hand/ dry hand when you're breading anything! Only use one hand for wet stuff, one hand for dry stuff. This keeps bread crubs and flower from forming little globs when the wet and dry elements mix together. I used wet hand/ dry hand working at an italian restaurant for making fried eggplant and believe me it saves both time and sanity.

I would like to say thank you for this video. Well, all your videos are brilliant but this one I simply had to follow your instructions very simply. Yesterday was father's day and I wanted to make eggs benedict for my father. Poaching eggs and making the hollandaise sauce was always the bane of my existence but with your advice it turned out to be an utter success! So thank you very much. Your impression was more Ben Kenobi than anything. Also, did you know that scotch eggs aren't actually Scottish; their name comes from a term called 'scotching', which refers to both chopped meat and covering/wrapping food. So, it's an egg which has been scotched in meat that has also been scotched.

This is my second favorite Basics with Babish episode . . . I'm from Oklahoma and my grandfather was a meat cutter for several years, so the tomahawk episode takes priority. Seriously, I've only known about a tomahawk steak for a couple of years, but this discovery has changed my life.

Poached egg: Usually I spin the water(make a vortex) drop the egg in the center of spin and splash some vinegar in the water. Seeing you use a strainer is pretty cool and simpler
