I worked at KFC for awhile. This is giving me mad flashbacks. But we just used regular water. No marinade. The original recipe is pressure fried. Extra crispy was open air fried.

Pressure cooked (was it 14 mins?) in the self-timed stove then done. I may have forgotten something, I worked there in 2012

I work at KFC, and this is pretty much spot on. The breading process especially. Except, our dredge station is kinda crazy. Imagine what was done here, but on an industrial level, complete with motorized parts. I won't go into detail, since we're not really supposed to talk about KFC's methods, but I just think it's an interesting machine. Real pain to clean, tho. :\

As a former KFC employee, you almost got the process right. Firstly, the chicken comes out of the cool room and gets a cold plain water bath. Then dumped into the breading and arranged onto the "birdcage". The breaded drums then get a second plain water bath before they're breaded again and placed in the birdcage. The pressure cookers are heated to 180 degrees Celsius, then birdcage is then placed into the pressure cooker and pressure cooked for 15 minutes. During the pressure cook the oil slowly cools down to about 125 degrees Celsius (if memory serves me correctly) Then during the final minute the cooker depressurizes and the chicken comes out looking perfect. (Note this is how it was done in Australia in the "4 head" cookers circa 2009. I believe they use 8 head cookers now and the process may have changed."

The seasoning is literally sold in supermarkets. It's called the Marion-Kay 99-X seasoning. Verified by the Colonel as well. At one point he even recommended KFC outlets use it.

Sadly Colonel Sanders was not happy with what KFC did to his recipes. He spoke out publicly about it and ended up in court. From what I hear, his recipes are still served at Claudia Sanders Dinner House in Shelbyville, KY.

Chicken pressure frying tips: Scream louder at the chicken, more pressure. "FRY FASTER" Is a good way to get them crispy. "I'M NOT PRESSURING YOU" Is good, for obvious reasons.

Msg doesnt have to be bad but like any salt too much is very bad and banish as much as I love his recipes is definitely going hard on the salt with everything. But I suppose if hes got good genetics for his arteries so they dont clog easily and doesnt have any problems with blood pressure then maybe it wont be an issue.

Grant D excess salt doesn’t dehydrate a person if they’re adequately hydrated. your natural response to excess salt is to become thirsty and drink water to dilute the salt. as the original commenter noted, the 5th glass of scotch is the culprit. alcohol actually dehydrates you and people grab at it because it’s a liquid and they incorrectly think it will rehydrate them.

Natrually, it's Litteraly just dried and crushed seaweed, tomatoes, or mushrooms. That said, they usually add a ton of other chemicals. Also, I avoid these things anyways, because I'm alergic to msg. The prossess of rehydrating brings it out and makes me sick. (So, I don't eat rehydrated tomatoes, nushrooms., or seaweed, and yes that means I don't eat sushi).

Babish you GLORIOUS BEAST you've done it again! I've always had trouble with fried chicken getting it to cook without burning so I tried your second recipe and while there were issues with the timings and temperature on my end it ended up as the best fried chicken I HAVE EVER EATEN. Definitely a member of my and my roommate's clean plate club! Also you inspired me to break down a chicken for the first time. You bastard, you make it look so easy! It was a little bit of carnage but everything worked out great in the end!

He has already made the prison sauce from Goodfella's which is definitely better, they use razors to cut the garlic! He has also produced the basics sauces episode as well as Spa-peggy with meatballs from King of the Hill, a cheat/quick tomato sauce; better than the one as it is described in that 2 minute scene. Hey kid, 20 people; oil, garlic, tomatoes and paste stir so it doesn't burn; add your sausage and meatballs... A quick search will also reveal so many of those already on youtube, it's as if this is actually something people care about; how Italians put gravy in every movie they make. And Asians put rice in all their movies to prove a point too? lol

I'm from Kentucky, and back when I was a kid I assumed KFC existed only in Kentucky since it's in the name of the restaurant, and then I moved to Indiana and saw there was KFC there, but even then I just figured that, since Indiana is next to Kentucky and we were just right on the border, there were a few branches that had managed to take hold across state lines but it was mostly a Kentucky restaurant. It wasn't until much later that I learned that KFC is so widespread it even has a presence outside of the U.S.
