For the record, you do *not* have to use lasagna noodles for the "lasagna" recipe. An equitable quantity of Rotini (and other dried pastas with sufficiently abundant surface area, i.e. no spaghetti or linguini noodles) works equally well, and is ultimately easier to plate up. It's amazing, and I cannot recommend it highly enough. Add a teaspoon of tomato paste to the veg while sautéing for an extra tomato kick if desired.

Made the skillet lasagna yesterday - it was delicious. A tip if you cannot easily get Italian sausage where you live (or if it is extremely expensive, like here): Get some pork mincemeat instead. Spice it up with some crushed fennel seeds (about a teaspoon for a pound of meat), hot pepper flakes (I would use one small pepper or a bit more), freshly ground pepper, salt and a heaped spoon of oregano, just mix all of the spices into the meat. Cut up some bacon and throw that into the skillet before you cook the meat (I usually cook the bacon until it is no longer raw, but not quite done, then toss the mince meat in). This is really tasty, a bit leaner than sausage and quite inexpensive.

I have returned to this video three times for a refresher course. Whenever I watch your videos, I never make the exact recipe. I take inspiration from your recipes and make my own dish. Tonight I made Penne pasta with Italian sausage, sweet peppers, red onions, mushrooms and tomatoes in a red wine and butter tomato sauce with mozzarella cheese. It tasted extraordinary! You have taught me things about cooking I didn't know I had the ability to recreate. Thank you for your amazing contribution to the cooking community! *Also - this episode and the pan sauces episode are my favorite!

Farm mushrooms aren't dirty at all. They're mostly grown on peat, which is so clean, you could eat it right out of the mire. Also, usually there are no pesticides or other chemicals involved in the growing of mushrooms. Some brushing is all the cleaning they need.
