Well, I tried 4 different bagel recipes, finished shooting at 8pm yesterday and edited all last night - now the episode is live, and I can admit to myself and to the world...those bagels turned out a little small. Maybe go 85 grams on those balls.

The best kind of salmon to use for bagels is smoked salmon IMO. The smoky flavour combined with the sweetness of the cream cheese is really an experience. Smoked salmon alone is also delicious. I just really love salmon.

*WOW*doge meme to each their own, I guess. I like mackerel and tuna (never tried kawhai though, will do one day) too, but there’s a lot of salmon out there. It’s super abundant in our oceans, while several species of tuna are overfished. I think it’s a bit more sustainable. Also, I like raw fish as much as the next person, but I’m from NY. I was raised eating lox (gravlax?) and I think it’s super tasty. Believe what you want though!!

Cool trick: if you don't want to put the sandwich in the oven for the cheese or you don't have an oven, just put it in the microwave for a few seconds. It should melt, pretty similar results!
