Bison Meatloaf with Creamy Mushroom Gravy
A super easy meatloaf recipe with creamy mushroom gravy.
Although you can make bison meatloaf with your favorite glaze, we love the way the gravy compliments this dish.
Recipe:
For the meatloaf:
Ingredients:
2 lb- fresh ground Bison
1 cup- diced onion
1/2 cup- diced carrot
1/4 cup- chopped parsley
2 each- whole eggs
1/2 cup- breadcrumbs (you may need more or less depending on how dense you like your meatloaf)
1 TBSP- chopped garlic
1 TBSP- dried Italian seasoning
2-TBSP- Worcestershire sauce
salt and pepper as needed
Method:
Place all ingredients into a mixing bowl.
Combine everything well with your hands.
Line a bread loaf pan with cooking spray.
Place meatloaf into the pan and press down gently to form.
Be sure to cover the entire inside of the pan including the corners.
Bake at 375F for about an hour, or until the internal temperature is 160F.
Remove and rest for 20 minutes.
Recipe:
For the creamy mushroom gravy:
Ingredients:
2 cup- fresh mushrooms. use any mushroom combination you like. In this video we are using crimini and oyster mushrooms.
2 TBSP- butter
1 cup- white wine
2 cup- beef stock
1/4 cup- flour
1 TBSP- chopped parsley.
1/4 cup- half and half or milk.
Method:
Melt the butter in a sauce pan over medium heat.
Add the mushrooms and saute until slightly browned.
Add the wine, cook and reduce the wine to half.
Add flour to make a roux.
Add beef stock and stir until thickened.
Add Worcestershire sauce and parsley.
Stir in the half and half until you reach your desired consistency.
Season as needed.
Spoon a generous portion of the gravy over sliced meatloaf.
Notes:
If your gravy becomes too thick, add a little milk and season appropriately.
If your gravy is too thin, add a little corn starch slurry to thicken.
