Black Eyed Peas are as delicious as any other type of legume. All that is needed to create the perfect pot of black eyed peas are the right aromatics, spices and of course, dried peas over the ones in the can.

Ingredients:
3 cups black eyed peas (pre-soaked)
1 medium onion (finely chopped)
4 cloves garlic (minced)
1" piece ginger (minced)
4 pimentos (finely chopped)
1 carrot (diced)
3 celery stalks: stems & leaves separated (finely chopped)
4 sage leaves (finely chopped)
1 scotch bonnet pepper
1 bay leaf
1 tsp geera/cumin
1 cinnamon stick
2 tbsp roucou
3 tbsp vegetable oil
4 cups water
salt and pepper (to taste)
Method.
1. Add oil to a hot pot.
2. Add geera to oil.
3. Add aromatics and veg to pot on medium heat. Season with salt then saute for 2 minutes.
4. Add black eyed peas, bay leaf, roucou, cinnamon, water, half the fresh herbs and pepper to the pot.
5. Bring to a boil on high heat.
6. Reduce heat to low, cover then simmer for 45 minutes.
7. Remove 1/2 cup of peas and place in a bowl. Mash into a paste then return to the pot and combine with liquid to thicken the sauce.
8. Finish with remaining fresh herbs.
9. Enjoy!
