Okay so I tried this cake.. It turned out absolutely amazing! Just the way it appears in the video and just the way I hoped it would be. It was a hit in my family! . It may seem elaborate but if you just focus on one step at a time, the final assembly is such a joy and the outcome is even more satisfying. Dear Bruno, thank you so much for sharing these superb recipes and making us look like pros before our families :)

Wow, just wow my grandma said that her mother used saucepans greased with lard and flour (butter was not very popular, nor very available at that time) to bake cakes and now i can undestand how she was able to do that. Thanks Bruno! I can never be dissapointed in you!🥰🥰

Love it!!!! Reminds me of my fiancé he’s a French man also a chef and he’ll be cooking and baking with me and it’s my favorite thing to do in the world. We are both chefs obviously ,but when he speaks French ugh I melt hahaha it’s so romantic to me even when he’s talking about food and adds on these romantic comments “Je t’aime beaucoup mon amour” haha 😂 I’m like Oui Chef 💋 likewise ! I made this cake following the recipe. It’s a great way to practice certain techniques. The diplomat cream is really delicious. Personally, I found the ladyfinger cake too be far too dry. You really have to soak the layers in the syrup- brushing them understates it.

Oui, nous avons en effet plusieurs interpretations. A Bordeaux, chaque pâtissier avait une recette différente... avec ou sans cerises, biscuit chocolate avec Chiboust au chocolat et Chantilly. Mousse et Chantilly. Diplomate et Chantilly... Il y en a pour tous les goûts. Après, c'est le client qui aura le dernier mot ;)

Your receipts are clear , but you know, you are taking all of them into a higher level what makes me lazy to try most of them. I should have heard You speak it when I first heard it in My childhood, You make Me forget what I feel about Your language. YOU *_DA BOMB._* That's how We say it in NYC. I love the way You mix Français FLAWLESSLY with English (Speaking FrenchLish) (I hope I used Français correctly). I binge watch just to hear You speak and COOK. Believe it or not My Daughter speaks French (Spanish & Japanese she travels the world) she learned in High School and she has friends from Haiti that she keeps in practice with.

Excellent homage to the age old classic! It’s shocking that only a few bakeries in the USA actually stick to five or six traditional old school cakes that are mind blowing! It must be the labor-intensity that scares some owners. Most shops I’ve seen offer 25 different varieties of soy bean oil based ‘bakery product’. They would actually make more money with less resources and offer their community something everyone could be proud of if they just stuck to doing a few things at Chef Bruno’s level! 🤦♂️

Very nice! I have very strict standards for my favourite black forest and this meets them. I too always put chocolate mousse in mine whereas most recipes just seem to have too much whipped cream imho and I use Lidl sour cherry jam & Griottines. It's so much work but worth it.

How does chemistry behind this tempered chocolate work? Is it because store chocolate bars are arleady tempered and you don't change the polymorphic forms of cocoa butter, so you basically melt it and it re-sets being arleady tempered?
