Hello Blanche!! I watched your video a couple of times to get ALL the steps correct for making the Maqlouba. I wanted to make something very special for our 'belated' Christmas get together ( couldn't do ON the Holiday...Covid :( My daughter's husband is Palestinian and this dish just spoke "special" to me ....and he is. It symbolized family, gathering, and celebration. Well, I must tell you, it turned out FABULOUS and they ( daughter , son in law, and granddaughter) were blown away...me too! Seeing your mom taste n adjust the salt, made me want to share my idea. As a Pakistani, my meat pulao (pilaf) is pretty highly rated, n the salt level is always fine, so I feel confident sharing this. The ratio I use in cooking in general, is: 1 teaspoon salt for every cup of rice, beans or lentil, and for each pound of meat or poultry. So if I have 2 pounds of meat, n I use 2 1/2 cups of rice for the pulao, I would add 4 1/2 tsp salt while making the meat broth. The rice just absorbs it, n the dish comes out fine. Of course, this is according to my family’s taste. Others can reduce or adjust as they like.

My mom used to always tell me "the darker the food the tastier" and it is true! Your maqlouba is dark which means there is enough spices and it means the chicken and onions are well caramelized. Just watching this vid makes me want to make a mini maplouba just for myself lol!

Spring of 3/21, I very recently learned about Maqloobah, and have been studying it's production with very great interest. The first thing I've learned is that it is made with chicken, rice, vegetables, and Arabic spices. That is where commonality ends! The best recipe I've found on the net is Saudi style. Your instructions in this video, however, have been the best and clearest to make this meichel! (Meichel is a Yiddish term which kind of means "small feast"). Tonight's small feast that I'm preparing for the sewing ladies will include chicken that I've marinated over night with 7 spices, garlic, and lemon juice. I've pre made my broth, basically as you have, and I've separated the chicken. I will saute up my chicken thighs. Top layer will be fried eggplant, layer of partially cooked red tomatoes, YOUR cauliflower, YOUR caramelized onions, half of the rice, partially cooked and mixed with herbed tomato sauce, fried eggplant, partially cooked onion slices, partially cooked green, yellow, red peppers, and a final layer of partially cooked rice with yellow raisins, and pieces of the chicken I used to make the broth. I calculated to the last drop the total amount of broth needed for the rice. That goes in last, stove top cooking/steaming for 20 minutes, and as per Israeli instructions, after the pot is inverted, do not touch it for a minimum of 3 minutes. I'll be garnishing with chopped parsley, toasted pine nuts, and thank you, toasted almonds. Sadly, just as no two Middle Eastern nationalities agree about the recipe, I truly doubt that any one cook can ever repeat his or her recipe a second time. So thank you very, very much, from your distant Middle Eastern Cousin, who came here circuitously via Eastern Europe.

@@blanchetv Thank you for your lovely note. They thought I was an absolute genius. White raisins and cardamom pods in the rice are amazing. The California peppers were fantastic, much more flavor than a bell pepper, without the fire. I also added fried green tomatoes for a Southern touch; THEY WORK! The maqloubah was assembled in a 4 quart pot, and it disassembled absolutely perfectly. It fed the four of us last night. It fed the four of us tonight. It will feed at least 3 more of the mah jong group tomorrow. And none of us went away hungry. As for the sewing group, I only sew human flesh. My wife is the quilter/sewer, and if you are interested in joining her Atlanta group(s), she is always recruiting! Again, thank you so much, I will be following you ladies intently.

My best friend is Palestinian born Chechen and he showed me how to make this like 20 years ago. But he used lamb for meat and layered above the lamb wheels of eggplant and then rice on top for cooking. then when you turn it over, the rice on top lamb on bottom.

I would roast it with the cauliflower. Some people fry it in oil, but I think eggplant absorbs too much oil that way.

Never thought about making it in an instapot but yes I imagine yes it would concentrate the flavors! I worry that maftoul and couscous would not hold together as well, and get mushy. If you want to sub something other than rice, bulgur wheat might be a good sub , but I haven't tried that before.

Nice video.. started following you and your lovely mom. I’m from Palestine as well. One question though.. what happenEd to the original Makloubeh in the white ceramic pot? Confused on amount of water you put as I know we put water at least half an inch above the rice ? Great work will refer your KZbin channel to my friends.. you’re funny as well 😉🙃

We made two pots of food, so we could have one camera ready. When I pay my camera crew to come shoot the videos, I can't afford to pay them for waiting while the food cooks. So I always have one ready and one I do on camera. Yes we did put water 1 inch above the rice. Thank you so much for joining us! Share with other Palestinians that want to keep our cuisine alive! You are really Creative. Yes, Palestinian Maqlouba is one of the most beautiful dishes. Maqlouba is a heritage, sign and history of this great people. Thanks alot do not forget that weAre mediteranians we have the ssme influance even from the Otoman empire our cooking has a lot of commont points slso my family comes from Asia Minor Izmifr And Istabul I have been fascinated from the Arab colture and i am saying colture because wi believe that food is a part of any nations colture i discovered your chanel recently and i am fascinated regards to your mom and best wishes
