Seeing your mom taste n adjust the salt, made me want to share my idea. As a Pakistani, my meat pulao (pilaf) is pretty highly rated, n the salt level is always fine, so I feel confident sharing this. The ratio I use in cooking in general, is: 1 teaspoon salt for every cup of rice, beans or lentil, and for each pound of meat or poultry. So if I have 2 pounds of meat, n I use 2 1/2 cups of rice for the pulao, I would add 4 1/2 tsp salt while making the meat broth. The rice just absorbs it, n the dish comes out fine. Of course, this is according to my family’s taste. Others can reduce or adjust as they like.

Hello Blanche!! I watched your video a couple of times to get ALL the steps correct for making the Maqlouba. I wanted to make something very special for our 'belated' Christmas get together ( couldn't do ON the Holiday...Covid :( My daughter's husband is Palestinian and this dish just spoke "special" to me ....and he is. It symbolized family, gathering, and celebration. Well, I must tell you, it turned out FABULOUS and they ( daughter , son in law, and granddaughter) were blown away...me too! Whew! the flipping part I left to him, because my pot was a bit heavy. Thank you soooo much for this step by step video. Signed..and very proud MaMa

I made a mistake watching this video while fasting!! however i enjoyed it and will try to make "maqloobeh" the same way. you ladies were amazing :-) Palestinian food is the best.

My mom used to always tell me "the darker the food the tastier" and it is true! Your maqlouba is dark which means there is enough spices and it means the chicken and onions are well caramelized. Just watching this vid makes me want to make a mini maplouba just for myself lol!

Love the video. You said that you can use eggplant if you want: for me eggplant is essential! Can’t imagine not using both cauliflower and eggplant, but thank you for rest. It really helps me in recreating the wonderful Makloubas I have eaten in Ramallah.

I would roast it with the cauliflower. Some people fry it in oil, but I think eggplant absorbs too much oil that way.

Nice video.. started following you and your lovely mom. I’m from Palestine as well. One question though.. what happenEd to the original Makloubeh in the white ceramic pot? Confused on amount of water you put as I know we put water at least half an inch above the rice ? Great work will refer your KZbin channel to my friends.. you’re funny as well 😉🙃

We made two pots of food, so we could have one camera ready. When I pay my camera crew to come shoot the videos, I can't afford to pay them for waiting while the food cooks. So I always have one ready and one I do on camera. Yes we did put water 1 inch above the rice. Thank you so much for joining us! Share with other Palestinians that want to keep our cuisine alive! Looks fantastic, Blanche! Question for you... I thought Maqlouba is supposed to have eggplant. I thought that was a staple of the dish. I know you can use other veggie but thought eggplant is a must. Is this dish unique to Palestine? Thank you and your mom. You two are wonderful!

Great questions Anna! Yes this dish originated from Palestinians. While many people enjoy it with eggplant, I grew up eating it with cauliflower only. It really differs from family to family. Many families also add carrots. It's really your preference, but eggplant works great as an addition if you like it! Thanks for your support and hope you give this dish a try!

The pot you arranged the maqlooba in was ceramic Coated white interior but when you unmold it was different pot ? Also what brand is the white one it looks very high quality

We made two dishes. One in front of the camera in the white pot and another in a silver pot. We didn't think our viewers wanted to wait 45 minutes for the food to cook, which is why we premade another one. The white pot is by Henkels. :)

Ahlen ! Looks amazing and tasty ! 2 questions: -Did you ever think about doing it in an Instant Pot? I have the feeling it would concentrate the flavors even more and cut the cooking time -Instead if rice, could I make it with real couscous or maybe Maftoul?

Never thought about making it in an instapot but yes I imagine yes it would concentrate the flavors! I worry that maftoul and couscous would not hold together as well, and get mushy. If you want to sub something other than rice, bulgur wheat might be a good sub , but I haven't tried that before.

@@blanchetv I wouldn't be surprised. Baba grew up I think in yaffa I am not positive. Or was it. Bethlehem? They are from the same time period I think. My niece has a picture of him in 3 piece suite on the beach in Santa Monica. He spoke proper English.

I'm gonna be doing my first maqlouba today but instead of cauliflower I'm gonna put betenjen. Hope it will taste as good or kind of as good as my mom's maqlooba 😊

Thank you to both you and your ageless Mother for uploading your wonderful and healthy cooking skills, such Beautiful Women with stunning figures. Girls (nowadays boys too) usually got taught to cook around ages 8, 9, and 10. We had to accompany our Mothers, Grand-Mothers, older Sisters or Aunts in the kitchen every day and pay special attention because we would have to demonstrate what we have learned. God help you if the food wasn't tasty and well presented. The Male Family Members were the harshest critics as were the Grand-Mothers. Some girls got spanked and shouted at (neither my sisters nor I ever did because we were 'Good Students' and eager to learn and please, plus we didn't fancy a spanking 😖 🙂 Right up to this day we carry the title of 'Magic Hands' Our Mother and Grand-Mothers were very kind and patient with us and always instilled into us to cook with love, pride, happy hearts and light fingers/hands. I've eaten some rough tasting dishes (including Maklouba) cooked by people over the years even in Restaurants, woy, woy, woy. I've also tasted food that makes the heart sing 🎶

Thank you for sharing your story Julie! Yes we have a plethora of harsh critics in our family too, fortunately no spanking lol. If my dad ever complained about my mom's food, he would deeply regret it after trying restaurant food. Some people don't realize what they've got until it's gone!
