A quick n' dirty way to not have to go through and define what you want as sharp edges and not is to use the Bevel Modifier and set the limit method > angle to a set degree you desire (say it has really sharp turns and corners, 65-90 should do). Then throw in a Weighted Normal modifier to ensure that the shading looks good. For extra smoothness, you can add a subdivision modifier as the Bevel Modifier will restrict those wanted sharp corners with the added topology around those areas (if its still too smooth, bump up the segments and/or the amount value).

Great content :) I just think there should be a way to accelerate the selection before applying the Glass shader. In the Select Menu, but I'm not sure !

Maybe pressing on Select -> Similar -> Coplanar, but it might select the walls as well. Worth trying, in my opinion :). You would have to do it once for each of the four orientations, though.
