Thank you for taking the time to make this. I work in Lidl in Dorchester, and I was thinking of trying our flour. Now I know to save my money and stick to Green Dragon. I did some chicken balls today, with chow mein, and some of the S&S sauce thickened up. Me and dad loved it. I cook basically every night now. I know one thing's for sure - When you release another book, I'll be one of your first customers!

In Canada they use Brodie XXX self rising flour to make Sweet and Sour Chicken balls. I haven't found an equivalent to Green Dragon / Brodie XXX in the US

I tried a different flour as I couldn’t get green dragon here in poland what a disaster, eventually got a friend to send me some over along with other things from your web store . Good evaluation there. I still have to shoot my comparison video. I will use exactly the same amounts of flour and water. I'll also cook a ball from each batch together in the mini fryer for the same time. I'll be interested to see if it turns out the same as yours. I'm guessing it will.

One of our local chinese take aways uses lidls flour ihave seen the owner instore multiple times buying half a trolley's worth of it, not sure about the other take away. Had chicken balls from both and they seem the same from memory, i'll have to pay etter attention next time i get it. Thanks for the video it was interesting take care.

I made chicken balls last night and I could not find green Dragon flour so use normal store self razing and the turns out full of oil and not smoothe and looked like the darker one ,the did not expand either. So you guys where 100% spot on with right flour I can't buy it in Australia ,,🥺 Im stuck with the oily crap lol

Great video guys. Firstly, Chin as I may have already said, I'm not a great lover of sweet and sour sauce. It's too sickly sweet for me. However, the bottles of Lee Kum Kee sweet and sour sauce are actually similar to something you'd get from a takeaway IMHO! With regards to the flour, I'd love to know why the Lidl flour held more oil. Just less fine?

We use vegetable oil, every takeaway uses veg oil, if your using green dragon, it sounds like your oil isnt hot enough when they 1st go in, if your not, use green dragon it makes all the difference

I completely agree with what you said however I feel like the Lidl flour is very unreliable sometimes it can be just like the green dragon but other times like shown in this video it can be super greasy. Im not to sure why this happens with the Lidl flour but if your cooking at home for yourselvs I would definitely go for the green dragon as you get better results with it.

@@ChinChooReviews ever since covid there where was a lack of it going around for months and I feel like as stated in the above comments they started outsourcing the product and thus the quality has gone down immensely. Recently I would say that Lidl flour has been a very low standard compared to usual. Hopefully the quality goes back up to what it was, theres a reason so many Chinese takeaways use it

For us mere mortals unable to get Green Dragon flours we've other legit options. In a pinch, cheap general purpose self raising flours can be enriched with potato/corn starch for more crispiness and additional baking powder and a small small amount of baking soda will add more lightness to your battered balls. However, if you're aiming to get even closer to Green Dragon Self Raising flour use '00' flour which is a way finer grain of flour and for every 100g of '00' flour combine it with 1 level tsp of baking powder to make your own self raising flour blend. Your only issue here is that your self raising flour now costs over twice the price of Green Dragon Self Raising flour but if you can't get Green Dragon, or really dont want to pay international shipping, what you gonna do eh? Furthermore, many takeaways and restaurants season their batter with a little salt, MSG and white pepper. Unlike the UK, US self raising flours contain salt in their blend so that means reducing the salt content of your batter or completely eliminating it altogether. Hope this helps someone.
