One of the theories of the rich history of dairy in Yunnan is that when Koblai Khan (first emperor of the Yuan Dynasty) conquered the region with his troops, they also brought the practice of cheese-making. The climate of Yunnan was also conducive to cow farming, so dairy consumption has flourished.

Dairy products are relatively common in northwest China. The dairy diet in Yunnan should have been brought by Mongolians in the past.

They have another type of cheese in central Yunnan called rubing 乳饼, which I like a lot more than rushan. Quite similar to halloumi, usually eaten stir-fried with ham or veggies, or barbecued with a salt and Sichuan peppercorn mix. Rushan's rubbery texture is indeed unpleasant 😅

So..... a pizza could, in theory at least, be made with the ingredients from this province?? Sounds like YUM! Saute the mushrooms, slightly pan fry the ham, chop both up and mix with slightly more cheese than combination of the mushrooms and ham and top on some sort of crust or crisped up glutinous rice cake. Sounds delicious!

Dali is awesome but damn the main streets are overwhelming at night. I rode a snoopy style electric acooter on the lake and it was so fun!! So many nooks and crannies where the tourists dont go. and the weather is banging and not too hot!!

As I remember the older rushan wasn't made in the mozzarella way. it was similar to (soy skin) 豆皮. Just collect the layers on boiled milk and hang them to dry. most rushan we have today probably is inspired by mozzarella.

No, you don't understand China well. This methods exist in China for thousands of years. In Tibet, in innner Mogolia of China it's very basic method to treat the milk.
