You can make maple candy while boiling the syrup . When it is almost done take a small pan of the syrup and pour it on some clean fresh snow in a thin drizzlly line. You can make circles or fun patterns. It should crystallize in to a chewy yummy treat. Do a test with a spoonful first. Kind of like making fudge without a candy thermometer

I learned how to drive on a tractor in the desert in California. I was probably 14 or 15 then when my parents moved us to a farm. It gives you a good start for confidence and aptitude for a fun life of driving anything. I have more of an appreciation for maple syrup now.

Oh man how exciting!! I'm drooling. My cousin in Quebec has maple trees and he makes tonnes of syrup. You could also boil some until it gets really think and then pour it on fresh snow. It gets hard and then you take Popsicle sticks and wrap it around the stick and eat it like candy. It's delicious.

If you want to speed up your boiling down you can put a second pot on top, set it on a support like a screen and warm up the pot on top with the steam coming out of the bottom pot, that's how the evaporators do it. With 19 gallons you are not going to get much more than a pint and half. Those are pints. Those plastic lids will need to be refrigerated if you don't get enough water out of the syrup it will spoil.

Yeah, I remember loading that wood stove with an evaporator on it. It did take a lot of wood. I'd say 8x8x10 shed full of split wood for boiling. Not sure how many times my uncle had to refill it but it was definitely a lot of fuel for what he did.

Yes, quite.:D He had done it for years like that. 30-40 years at least. It wasn't commercially produced like you see on videos on here. But supplied local small shops and sold out of his house. He did have a couple mainlines and tapped quite a bit trees which then collected into a cistern-line tank, then pumped into barrels to boil later. It was quite an awesome feeling standing in the middle of the forest, hearing the wind blow and your heart beat and just the calmness of the woods. I think this is part of the reason he did it.

I think your sap yield is being hampered by the seal around the tube into the bucket - try cracking the lids or putting another small hole in the top or, preferably, the side of the bucket. You get sap AND air from the tube, causing a potential vacuum.

I love that burner oven you have. My brother was thinking of getting something like this for his summer place and just use grills and electric stove tops. He inherited all of my stepmothers cast iron and he got them cleaned and seasoned.

Love watching your version of starting a fire. Truly a “Modern-steamer”. Did you think of using flat lids and rings, so you would get a seal on your syrup and also not expose it to the plastic of the white lids? Have a great week!

Congrats on your first batch of maple syrup! If your shelf space is running scarce then I'd encourage you to take the next batch down a little further for a denser consistency (and hence less jars). If you prefer a lighter consistency with your food products then you can always add some water back in. Now when you all get some cows or goats and make some butter you can take the leftover buttermilk and make some pancakes and top it off with the syrup and have with your homemade bacon! Darn, just made myself hungry - lol

we heated the syrup to 221f which is on the higher end. If we brought it higher I am afraid it would burn

I believe you are correct, 19 gallons would more likely yield 1/2 gallon rather than a gallon.

Yummy, fresh syrup! I think you need to tap those trees a bit deeper, everyone else I've seen mapling videos of have tapped their trees 2"-2 1/2" Pluto maybe not so eager to run outside now that she's been clipped.

When it boils at 219 F on a candy thermometer, it's done. Otherwise a hygrometer will give you the specific gravity, but a more expensive option.

It took 1 20 pound tank to boil 19 gallons into a half gallon of syrup

Study your weights and measures. You got almost 1/2 gallon of syrup. That's more in line with boiling 17 gallons of sap. (8 pints to a gallon, FYI)

Boiling with wood is traditional, and cheaper if you've got the wood, but propane is soooooooo much easier. It gets a little pricey once you hit several consecutive 40° days and the sap starts gushing out of the trees though.

Use as big a stirrer as possible. The more you boil it down the more dangerous the steam & syrup get. Oh & only 3rd today

I think you need to make a bigger spoon. Probably best to keeping the boiling process out side to keep the stickiness off the walls.

You are only getting a little sap from some of the trees because some of them are NOT tapped at angles. You CAN retap trees at this point in time. Just drill new holes at an ANGLE and then tap. The old holes will heal themselves so fast they wont interfere with the new taps.

How long can you collect the sap? Do you only take as much sap as you need for your family's use?
