I am a type II diabetic and just recently learned boiling sweet potatoes significantly reduces the GI. I plan on trying this method soon. Many thanks.

Hi Melanie! Today I made my second attempt with the orange sweet potatoes, and it WORKED! This time I tried cutting them in chunks, which worked much better for me. I also made modifications to the cooking time and reduced it to suit my personal preferences for texture. Last week the purple sweet potatoes did work perfectly with the exact method you demonstrated in this video, and cooked whole! So now I have two methods for two types of sweet potatoes, and I'm extremely happy. Thank you so much for creating and posting these videos for the world to benefit from- it's extremely appreciated! Fawn 🩷🍠🍴

Sweet potatoes are the best! It's strange that I only associate them with Thanksgiving and never think about picking them up any other time.

Thanks for the info. I'm making sweet potatoes, red beets, Brussels sprouts, and a nice salad. I'm also making beef, but that's just for me. My elderly mother won't eat the beef because she pictures the cows.

You mean you want them firmer on the inside? Cook for less time. For softer inside, cook longer

Hi Melanie- I returned to this video and made sweet potatoes on the stive for the first time in my life! I was able to follow along and the instructions were clear, simple, and easy to follow. I tried purple sweet potatoes and orange sweet potatoes- the purple ones turned out PERFECT! The orange ones were a bit soft for my personal preferences in texture, so I'll need to adjust the cook time. I think I'll poke them with a fork after the 10 minute markpoint every 5 minutes to verify the firmness, but if you have another recommendation for me, feel free to let me know! Fawn 🩷
@MelanieCooksRecipes3 ай бұрын
Hi Fawn, I'm so happy you enjoyed the purple sweet potatoes! Yes, poking them with a fork is the right way to see if they are tender enough to your liking :)

Do you eat the skin as well?
@MelanieCooksRecipes Жыл бұрын
I usually take off the skin from boiled potatoes when I eat them, but I do eat it sometimes when I make baked sweet potatoes. The skin is edible, so it’s just a matter of personal preference

My sweet potatoes are the size of the palm of my hands. So how long should I leave them boiling for?
@MelanieCooksRecipes7 ай бұрын
Reduce cooking time by 10 minutes and check to see if they are cooked (pierce with a fork and see if soft). If not cooked, just boil some more
@Villarreal4226 ай бұрын
be sure to eat the skin, that where most of the nutrients are
