Went to the Hilo farmers market yesterday and went wild, decided to try this recipe w/ a few substitutions, I discovered I was out of sesame oil, so I used equal parts extra light virgin olive oil and cooking oil where oil was called for. Also instead of white wine I used Koshiki Junzukuri Northern skies sake, it is mild w/ citrus overtones like white wine, used a medium Maui sweet onion finely chopped in lieu of the shallots. The basic recipe that Chef Jarod provides is very easy to adapt to what you have at home...be adventurous and experiment, hey if all else fails I have a yard full of feral chickens and they will eat anything!! I just made this and I must say I like it way more then how I was doing it before. I didn't have white wine but I added a bit more sugar like you suggested and it turned out amazing. I also added more veggies like carrots, broccoli, leeks, green beans, and frozen peas I had left over. Again, this was really good and I suggest people try it.

Yes I have done that, putting liquid on the pan after grilling meat on it. That is definitely doable here, after you remove the chicken, put some water or wine or stock to make a sauce and thicken it with starch or flour. I wouldn't cook the veggie in the sauce, but rather remove the sauce, stir fry the veggies, and then incorporate everything in the end with a quick mix.

Thank you so much for sharing this recipe. I had bought some bok choy and wanted to look up a good stir-fry recipe. Not only did you do that for me but I finally found the perfect way I've always wanted my stir fry chicken! I had a piece of chicken thawing out and took it in and out in perfect time to cut those thin little slices, the cornstarch marinade made it so tender. I can't wait to make more stir fry recipes with chicken!! I added some cut celery, scallions and a chopped-up serrano pepper for heat. It was delicious!

cooked this up and enjoyed with some beef instead of chicken I did cook the root part first to tender it up before adding the tops. I did also added some saseed oil with the veg oil about half and half it was very easy to cook and my first attempt at Bokchoy so I was impressed. Tasted good and I will try again. Okay...dinner was amazing and QUICK! The marinade made the chicken juicy, tender and taste out of this world. Didn't have shallots but used a medium sized yellow onion (I made four chicken breasts), and added some mushrooms that I had in the fridge. When I was a kid they would serve this as "Chow Mein" but it was a bit soupier. Was at the Panda Garden in Virginia Beach. Haven't had it since. Great stuff.

Yes the golden grits in the bottom are flavorful. You don't need to clean the pan up. I just don't like sticky bottom when stir frying the veggies. For me smooth/clean bottom pan makes sloshing the veggies or whatever I am frying easier and prevent burning. I could have used the non-stick but I try not to use non-stick due to chemical out gas.

Hi Swagata: you could reduce the amount of liquid to make it dryer. Reducing cook time will also make the veggie less wet and more crunchy. Hope that helps.

Very tasty. Used red wine instead of white. Added thin sliced carrot and fresh mushroom for umami, texture, color, & nutrition. Added Oyster Sauce, Fish Sauce, and MSG, to final ingredients. It is a "make again" recipe. Thanks Chef.

Starch tenderizes the meat. It also coats the chicken and when stir fried makes the chicken a little crisp. A little bit of starch won't make the pan too sticky.

Looks yummy, but why did you clean the pan before you added the veg? I would think that the beautiful, golden fond on the bottom of the pan would only add to the finished product...making it more flavorful and thickening the sauce with the corn starch you added in the marinade. Is there some reason I am missing?

What was the white powder? I think you said Sludge and I have made that before to make General Chicken but it was wet and the corn starch is what makes it not drip but you can tear it...it was strange but turned out great for the chicken. So what was the white powder because i have never seen that before called sludge.

Deborah Barber The cornstarch helps with the consistency of the sauce as also it is great when you want to have a more transparency with your sauce ,all the great colors you used to create your dish.The sugar will create a shine to it and aid as an flavor enhancer,so perfect.

Hi Laxmi, you could use 1/2 tsp of sugar diluted in few tablespoons of water. Or any clear fruit juice will work. The wine was just to add a slight sweetness to the dish.
