Bolognese w Pappardelle Pasta.

Pasta Dough: (I am using King Arthur brand)
115 g 00 Pizza flour
100 g semolina
2 whole eggs + 1 yolk
1 tbsp whole milk
1 tbsp EVOO
Bolognese Sauce:
3-4 lbs ground beef
1 lb italian pork sausage (optional but recommended)
1/2 C chopped carrots
1/2C chopped celery
1 cup chopped onions
** I blitzed all the veggies in a food processor**
1 tube of tomato paste
28oz can San Marzano tomatoes
1/2 bottle red wine
1/4 C heavy cream (at the end)
salt and pepper to taste
2 bay leaves
I didn't include my secret ingredient in the video, but if you made it this far, I'll tell you.
1 tbsp mushroom powder. This adds an incredible amount of umami to the ragu.
