@Fe Car Alkaline is the opposite of acidic and just like acids, strong alkalines are corrosive and can cause burns. Baking the baking soda decreases it's pH, making it a strong alkaline instead of a weak one.

It's fine. Plenty of foods have the same ingredient, like ramen noodles. You don't want it to be concentrated enough to burn you or throw off the flavor, but I don't think that was the case here.

Way back before the Internet, I watched a show on PBS (pretty sure it was Scientific American Frontiers but the timeline doesn't match my memory) that toured the Combo production line. Combos are produced by a co-axial extruder machine with a steam jacketed final extrusion form what would partially set the crust before a rotary knife would cut them to length. The seam she spotted is the remnant of the bracketry that holds the center filling extrusion pipe in the middle of the outer cracker extrusion. Once they were cut to length, they would then enter a salamander type oven.

I think I remember seeing how's it made with combos but it was a long time ago. I think it was almost was like a calk gun. The outer part had been rolled and baked and then the filling would be put in with the calk gun thing, then they would cut it into smaller pieces after baking them a second time?.
