Ingredients
Orange ganache:
130 g orange puree
20 g glucose syrup
150 g white chocolate
15 g butter at room temperature
Salted caramel:
30 ml of water
20 g glucose syrup
85 g sugar
25 g butter
90 ml heavy cream
vanillin
a pinch of salt
5 g dark chocolate
For a body of sweets (on average for 1 mold with 16 cells with a diameter of 3 cm):
200 g chocolate (dark, milk or white)
To paint the case (if desired):
25 g cocoa butter
about 5 g fat-soluble dye
polycarbonate candy mold
