We make something similar to this pithe but with wheat flour, we call it gavli. We don't cook the atta dough. In fact in olden days ladies used to sit and gossip in their free time and make this gavli. They would make dough balls make a small batch everyday and fill a jar. Once the jar was chock full of these gavlis they would make a kheer or payasa. This is one of the kheers a new mother is given everyday. This was a tasty way of giving milk to the mother.

Life is full of coincidences. I was talking to my dad and telling him that am going to try and make patishapta and dodh puli for Sankranti. He was reminiscing about his childhood days back in Bangladesh before they came to India in 71' and telling me how our grandma - Amma used to make Choshi pithe among other types of pithe pui. It made him sad that after Amma nobody tried making this and that part of his childhood is now lost. It just so happened that you uploaded the recipe that very moment and I told dad that I know what he was talking about and sent him your recipe. He was in tears seeing it. It's as if you have wrapped up his childhood and regifted him back his memories. Am sure he is going to sneak in the kitchen one of these days and try it and ' ma'r kaj badabe' but it would be worth it. Thank you for keeping these traditions alive.

Perfect timing! I was wondering yesterday how to make this as it's my baby's first Poush Shonkranti and this is something she can easily eat. Now I will make this recipe in the evening. 😀

This is my favorite payesh recipe. My grandma used to make it just perfect. She's no more with us. I miss her so much and this dish of hers. I'm glad to find it here..very few people know about this dish. Thank you for sharing this recipe. #feelingnostalgic

Finally made it for Poush Sankranti this year! It came out well, even though I panicked and put extra water in the rice flour dough at the first step. Thus, mine ended up too sticky for the simple two-motion process, but I got it to work with some extra rolling motions… very satisfying to get that nice shape. I used pilloncillo instead of nolen gur because that’s what’s local. It’s still a beautiful flavor, which felt more decadent than dark brown sugar. The pithe was so tender and nice to eat in the payesh. The quantity was enough for two big bowls, and though it took me a long time to finish making it, it was definitely worth it. Thanks bong eats for this spectacularly helpful video.

Wow...In Kerala we had similar varieties of payasam or kheer called Palada and Ada Prathaman

Kheer is called kheer in Bengali. Kheer doesn't have any rice or additions in it. It's condensed milk basically. Payesh is milk added with rice or in this case chosi....Kerala Payesam has a more liquid consistency compared to bengali payesh.I know this since I have had the privilege to taste both in life.

Gaintha pitha , the shapes are different . Here it is small diameter and small length . The ingredients are same of course .

In Chittagong, we call it gura fide (gura pitha). My mom steams the pitha before cooking in milk

Not an southern asian here, used to made this weekly it'll be better if you add some overly ripe jackfruit, and or pandan leaves during boiling the milk.

Those additions would be nice standalone, in a variation where the sweetener is not jaggery (molasses) but just plain sugar. Else they will compete and not complement. It always amazes me how much of the basics of east asian and south asian cooking are similar and there is significant crossover of the cuisines in northeast India.

I had it at Kasturi...fell in love with it. Didn't know the name so check the bill and it said Choshier Payesh - made a mess of the pronunciation making it tough for my Bong friends to help me figure out how it was made. Managed to convey the name after a few attempts!
