For the dredging station, there is a rule for seasoning the flour. Unless the flour is visibly a different color (not necessarily dark, just visibly not pure white, maybe slightly orange), you haven't done anything for the flavor.

table tempering chocolate is so much easier and faster. 45 minutes! No way, tabling takes like 5 min. You can feel the moment it goes into temper so you don't need to worry about temps. I watched the candy makers at Hercules Candy (KZbin) temper using their technique which is similar except they use their hands to move the chocolate.

If i really want greens but im out of fresh leaves i sometimes fry celery with fajita spice mix and garlic. something about garlic heavily reduces the sharp flavors from celery, reducing it to an almost citrusy flavor.
