This cake goes so well with Christmas...
It doesn't need an oven, and I made it without flour.
But the taste was so great.
As you can see, the cake design is so pretty, isn't it?
Even people who don't have an oven can make Christmas cakes.
You only need one fan.

237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
One egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)
♥ Cake finished size
[Size: 18cm*5cm]
♥ Flour-free Chocolate Crepe
[Frying Pan Size: 18cm]
5 eggs
5ml Vanilla extract (1tsp)
312g milk (1 cup + 1/3 cup)
75g Almond powder (100% ground almonds) - fine particles (1/3 cup + 2Tbsp)
25g cocoa powder (unsweetened) (1/4 cup + 1 tsp)
50g cornstarch (1/2 cup)
85g sugar (1/3 cup+1Tbsp+1tsp)
1 g salt
65g unsalted butter ( 4 Tbsp +1 tsp)
♥ Special Chocolate Cream
210 g (1 cup) unsalted butter
100g sugar powder (3/4 cup)
1 g salt
15g cocoa powder (2Tbsp +1tsp)
120 g dark chocolate (3/cup)
10ml Kahlua (coffee liqueur) (2tsp)
40g Heavy cream ( 2Tbsp + 2tsp)
♥ 50g roasted almonds (chopped)
50g whipped cream ( 3Tbsp +1tsp)
♥ Mirror glaze

100g starch syrup ( 1/2 cup + 2 tsp )
65g sweetened condensed milk ( 4 Tbsp + 1 tsp )
8 g powdered gelatin ( 1 Tbsp )
+ 40g water )
100g dark chocolate ( 1/2 cup + 2 Tbsp )

You are an amazing Baker. I admire the discipline and precision and skill in your assembling of ingredients, the proper mixing, a pleasure to watch. I am very strict about eggs, I beat them separately and pour them through a tea strainer size sieve. I don't like those goby things an egg has. But you also strained your liquid mixture! The complete assembling and and final decoration made the effort so worthwhile! Eating that cake in front of us is not fair :). Then again you have to taste to see that it is good, I do the same :) Thank you for showing and sharing the techniques I appreciate that.
