This was the nicest cake video I’ve seen yet. Each step was perfectly timed. No annoying loud music during the process. The end music was gentle & sweet. The cake looked beautiful. This is a wonderful cake! I tried making this today as a double batch and it didnt work out as planned - the mousse was lumpy (my fault for poor ingredient substitutions) and it set faster than expected at room temp. The substitutions probably didn't help there either 😅. I didn't get around to trying to make the orange jelly. Out of curiosity, for your dissolved gelatin, did you use powdered gelatin or sheet/leaf gelatin? I used powdered gelatin and I think that might've been why it set so fast. I want to try this again at some point and the lessons learned today are going to make me better prepared.
