In a traditional Steak and Kidney pudding (family size) all the ingredients go in uncooked with 3 tablespoons of water, sealed and steamed for 4 hours. The meat and water making their own juices during the cooking process.

That's what I thought. Possibly pigs kidneys, which would also be wrong, but it looked a lot like liver Edit. Just watched it back, yeah that's liver. Cook that for 2 1/2 hours and it going to feel like leather and taste far too bitter and minerally.
