i didn't have any chicken in my fridge, but had some wild boar meat. The recipe worked VERY well with the boar too. I added some julienned yellow pepper and it blended well.

I suggest you either omit it (not going to hurt much) or substitute with sherry.

I use the regular cooking wine. It's the same deliciousness.
