What are you using to wash the duck, is it soap powder.

Oh no, not soap powder. Just plain salt - we use it on poultry when we feel it needs a "salt scrub" like it's gone to a day spa 😀. The scrubbing and rinse gets it extra clean and the skin seems to take on any colour more evenly. PS: Ditto for "hainanese chicken rice", I always give my chicken a scrub to clean it first and rinse it clean, then a second salting to toughen up the skin. Western chefs will be alarmed at the "washing poultry" thing, but I make extra sure to not drip chicken juices everywhere. The basin, sink etc. gets washed three times - firstly with soap and hot water, then sprayed with disinfectant and washed down, and finally with Barkeepers Friend so that the sink is more sparkling than when I started.
