失传了娘惹卤鸭,要学哦 已经市场上没有人煮了的哦.
NYONYA STEWED DUCK 娘惹卤鸭
材料 A (腌制): Ingredients A (Marinate):
1.5~2 公斤 鸭 - 1.5~2 kg whole duck
适量的 盐 - Proper Amount of Salt
一汤匙 五香粉 - 1 tbsp five spice powder
两汤匙 酱油 - 2 tbsp soy sauce
2 汤匙 黑酱油/ 老抽 - 2 tbsp black soy sauce
适量的南姜 (切碎) - Proper Amount of Galangal (Minced)
材料 B: Ingredients B:
适量的油 - Proper Amount of Oil
一块 南姜 - 1 pcs Galangal
4~5 汤匙 红葱头 (切碎) - 4~5 tbsp Minced Shallots
4~5 汤匙蒜米 - 4~5 tbsp garlic
两汤匙 酱油 - 2 tbsp soy sauce
2 碗水 - 2 bowls of water
1~2粒 椰糖 -1~2 Palm sugar
柠檬 - Lemon
小火煮45分钟 - Low heat for 45 minutes

其实我们砂拉越古晋河婆人的“打卤鸭”的准备方式跟这个差不多哦。但我们会把整只鸭过油炸一下,然后我们南姜是剁碎的然后用锅无油炒到干,红葱比蒜米多,糖我们用亚达糖,有些人用甘蔗,酱油是甜咸两种混,出来的打卤鸭是又咸又甜,酱汁浓稠颜色黑到发亮的。

Great initiative to share the authentic Peranakan duck dish recipe. I truly respect Mr. Choo to allow outsider to ‘invade’ his kitchen and shared his recipe. He has a clean kitchen, and he puts on a mask while cooking and talking. With due respect, Mrs.Liew, do put on a mask for hygienic purposes especially for the food being cooked for the restaurant’s guests (the cut duck pieces) and do not used your hands to touch the food or the kitchen utensils. I know your excitement but please practice hygiene. Cheers!

上海酱鸭差不多 但不放大蒜 放普通的葱姜 酱油冰糖 再加点八角桂皮等 可能成品的话 收汁后 冰糖不如椰糖那么有颗粒感 比较清一点

我们家、也是这样子作的、切过的鸭子、比较多骨头、不太好吃.可用红糖、片糖燒的- 潮洲鸭、在潮洲他们是加干皮去烧的、还有一个香料-烧一个小时、鸭子、放隔天更入味~

我家婆的芋头卤鸭也是非常好吃。是她的妈妈留下来的秘方。源自广州的大厨指导。大厨的师父出自故宫的御厨房。来头不小,我也学会10%而已。

我打卤鸭也是差不多这些材料!南姜是必备!也是婆婆流传给我们后代的配方。不过我是用白糖煮化,没用椰糖!
