Delicious Chinese style tripe!
This is a very popular traditional recipe among the Chinese.
Many fear that the tripe's own odor is difficult to handle ... but if you use the right spices and ingredients, you can conjure up a delicious delicacy too.
Ingredients:
2500 g tripe
Ingredients & spices for pre-cooking:
- about 2 liters of water
- 8 slices of ginger
- 1 tsp salt
- 50 ml vinegar
Ingredients and spices:
- 35 g ginger
- 45 g of garlic
- 35 g spring onions
- 2 chillies
- a little chives
- 1 cinnamon stick
- 3 star anise
- 6 bay leaves
- 1 tbsp Chinese red pepper (Szechuan pepper)
- 1 tbsp Chinese green pepper (Szechuan green pepper)
- 1 tbsp coriander seeds
- 1 piece of brown sugar
- 2 tsp salt
- 2 cubes of broth
- 2 tbsp oil
- 80 ml wine
- 30 ml vinegar
- 1 tbsp sesame oil
- 40 ml light soy sauce
- 30 ml dark soy sauce
- 50 ml oyster sauce
