We got a new commercial stove about 2 weeks ago at the Faith Center where I volunteer. It has 6 burners and a big griddle. I have watched a lot of people using the griddle and decided to make breakfast for the office and other workers. I used: 2 lb Chorizo sausage 1 1/2 dozen eggs 2 bunches of cilantro 2 onions, one white and one red 3 bell pepper, 2 green and 1 red for color 2 large potatoes cut and cubed. I got the Chorizo cooking first, put aside, put the potatoes, onion, cilantro and bell peppers on the right side of the griddle. I put 4 slices of butter on the onions while they were about half way through cooking. I mixed the vegetables together often. when they were almost done I put the beaten eggs with a little of milk in them, salt and pepper and made scrambled eggs. When that was done I then mixed everything together. The steam was flowing off the griddle. It made 2 - 12" square aluminium pans full. We had both tortillas, corn and the big burrito tortillas. People put them on the griddle to get then hot and toasty. They put cheese on the fixings and everyone had at least 2. We had enough to put in the refrigerator for tomorrow breakfast. Not only I'm the computer repairman.... I'm now the cook!

My grandpa used to make this for me. He raised hogs in Red Oak, NC. Always had some good homemade sausage. Miss spending summers in Nash county with my grandparents. I think they call this hobo eggs up north.

I like to sautee up some mushrooms and add them in with the sausage, then grate some cheese in over the cooking sausage and eggs. Even been known to toss some black olives in it all too! No way to screw it up unless you overcook it.

After watching videos like this for several years we got a new commercial 6 burner stove with a grill not quite as large as yours. I bought a spatula kit from Lowe's. The stove was in our kitchen where I work. I told the office staff that I was going to fix breakfast last Monday. I bought 3lbs chorizo sausage, 2 onions, 2 bell pepper, cilantro and mushrooms. They said the smell was all over the building. I also bought flower burrito tortillas and corn tortillas. The ladies thought I was #1. I even got a marriage proposal from one of the young ladies :-). Those grills are the best.

You may discover your fried scrambled eggs will taste much better if you do not mix them in a bowl before pouring them onto the griddle. When the broken yolks and whites mix without the high heat the flavor breaks down immediately. Instead break the eggs directly onto the griddle and then mix them with the whites while they're frying. The flavor is a lot richer.

Looks incredible, could totally add some extras and make it like an omelet with say tomatoes or whatever you prefer. That sizzling is amazing, and it just makes me hungry. Also, you’re really cool! 😁

Sky is the limit with this my friend. Like I said, my mom to put breakfast on the table quick, this was it. Sometimes it was this and sometimes more stuff was in it.

My mom has made the same breakfast for me since I was a kid on lake wylie!...recommend taking her recipe of using chorizo sausage to give it just a little bit of kick and whatever hot sauce you wanted with it...(however I like it with a little ketchup)

The possibilities are endless with this groundwork of sausage and eggs. At this time we were kind of watching our calorie intake and carbs so we decided to simple eggs and sausage but the sky's the limit with the possibilities. I appreciate you watching and supporting me and thanks for the sub.
