I’m only 8 mins in, but I have to tell you… this smoked BBQ they’re eating does NOT taste like the smell of the charred smell you walk away from with a normal BBQ. I know what you mean, because I’ve experienced a charred burger in my day, but this is not that. Terry Blacks is about a mile from my house, and if I could deliver a couple of their ribs to you in an instant, I would. 🤤 It’s mind blowingly delicious.

You beat me to it, but if they're basing their opinion on Dad's kettle smoker they have no idea what happens after 12 hours in a cold smoker. It's an entirely different universe.

I’m in rockwall county so pretty close to the Dallas one and it was a 10/10. Smoke does not over take the meat flavor. It’s hard to describe if you haven’t had it.

People who've tried commercial smoked food / DIY smoke foods and say they don't like smoked stuff obviously haven't tried the authentic stuff. You should AT LEAST try it once, which should be the general rule for every food.

Well I can tell you right now that this meat does NOT taste like a bonfire smoke! They not only smoke it but it’s also very well seasoned. The type of wood you use also makes an entirely huge difference! Different wood has different levels of “smokiness” and different tastes. If you ever get the chance you have to try authentic Texas BBQ.

Texas brisket is seasoned with salt pepper and maybe some garlic powder. Thats it. Of course there's the mop sauce or a spritzing bottle. I usually use a Coke and Worcestershire mix or an apple juice Worcestershire mix. Of course you really cant taste the spritz or mob sauce but the sugars help develop the bark. There's also yellow mustard as a binder but you dont taste that either,it just helps your seasoning stick. While some do go with a bunch of crazy rubs thats not actual Texas BBQ.

It needs to be in Texas, though. There's a lot of places that say "Texas style BBQ" and as a Texan I will stop because I want good BBQ for a change when I'm away from home, and they get me every time. It's always cooked too hot and not long enough so it's dry and doesn't have any flavor. Also, if it's in a decent sized town of 10k+ and the parking lot isn't packed then it's probably not that great. Better than other states' bbq, but not great compared to Texas bbq. Soulman's BBQ is a lie, also. It's mid. Most Dickies will have better brisket.

There is grilling: like you would with hamburgers/hot dogs. And then there is Barbecue: smoking meat with dry rub or sauce. Its easy to clump them together, but they are in two different leagues altogether.

The type of wood used makes all the difference. Here in Texas we primarily use Post Oak. It's a very mild wood kinda like Pecan in that respect. Woods like Hickory and Mesquit are super strong and you can ruin your BBQ if you just used those two types,usually you use Oak or Pecan and ad a split or two of the stronger woods.

This. Too many people smoke meat for hours with Mesquite and it just isn't good for that. it's more of a finishing smoke otherwise it gets too bitter. Oak and pecan are my favorites.

A few years ago, I was cutting up a Cherry tree that has fallen because of a storm. I was trying to salvage the lumber and also (at that time) was starting to experiment in making charcoal. After a few hours of cutting the Cherry tree up my garage had a pleasant Cherry smell.

My neighbor would come down to my house to trim my pecan trees so he could smoke brisket using pecan wood. It was a win-win situation. I got my trees trimmed & ate his Barbeque.

Cherry and apple tree wood are really nice additions to the last few hours of a smoke cycle in my experience. Oak and pecan are my go to starter woods on a 10-14+hr smoke session

Unless it is imported American beef the out come of smoking it over there will not be as good. Our beef tends to be fattier and helps in the smoking process. A lot of Americans smoke meat like this all the time at home. I smoked a brisket last weekend for 18 hours. I have also come to the conclusion that Gaynor just really doesn't like good food. (joke) Or has tried some version of smoked meats she didn't like, but has never had good smoked meat.

So, when can I come over for a smoked brisket dinner? I’ve cooked brisket at low temp on my charcoal grill, with wood pellets, but it never turns out as tender and juicy as when Slow smoked in a proper smoker 🤤

@@andirandolph8830 What does low temperature mean to you? The ideal temperature needs to be 225-235 Fahrenheit i.e. 107-112 Celsius. What wood do you use? In Texas its Mesquite or Oak usually. Oak is milder. My suggestion is get yourself an electric smoker. Not sure if they are available in the UK but here in the US, they are quite common. It will maintain the precise temperature and takes the guessing out of it. Now for smoking I just set it and forget it.

@@andirandolph8830 Same. I cook with a cabinet pellet smoker (upgrading soon), mainly for ease. Pellet smokers are great for what they are, which is a really minimal amount that you have to pay attention to the cook since the primary concern's all about temperature control. And with pellets, that's done automatically. But it's still just compressed sawdust. You don't get the full smoke richness as you do from offsets, or just using real hard wood in general. And my cabinet smoker is a little worse because I have to lean larger cuts, at least for the first part of the smoke. Which means the point is pretty damned near to the firebox. So I wind up dropping the temp to 200 F to start, and kick it up to 225 after the wrap, but that only goes so far. Works well for the rib plates, though, because I can lay those flat.

What's impressive is that Josh's wife Gabby came in 2nd in the Korean Master Chef show on a season. So for Josh to say the meal is better than her cooking probably means a lot. Plus, Josh is stepping away from the Jolly channel for a while. He and his wife are trying to get pregnant, and I guess it's been a rough time so far.

@@coyotelong4349 I think I saw the news like a week ago. Can't remember where I saw it, but it said Josh and Gabby have been trying to conceive, and they are going to Korea for treatments, and he would be stepping away from the channel for a while. Not sure of the time frame.

I drive by this place every day. It's amusing to think that it is a "highway". It's a four lane boulevard lol. There's a lot of good second-rate BBQ in the US and travel distances are enourmous so it's worth it to take the time to plan ahead to expreince the premium BBQ.

There are so so many styles of BBQ in the USA. Texas alone has multiple regional styles. Styles of BBQ are generally determined by what type of meat is smoked, what kind of rub/sauce is used and what kind of wood is used to smoke. Most parts of Texas are against sauce for BBQ as they feel if the meat is cooked correctly a sauce will actually detract from it.

This is true. Just like steak, if you think placing some sauce for flavor afterwards, you are admitting defeat. However ribs, it depends on the style. A good sweet rib with a tacky sauce dried out on the smoker before it finishes is quite tasty. The only time to consider adding a sweet sauce afterwards, would be for blackened burnt ends of a brisket, and eating a large Texas toast slice.

@@tkcdac Typically the sweeter sauces pair best with pork bbq. Savory sauces are good with beef, if you’re using a sauce at all. Turkey and chicken can go with sweet or savory and can handle a lot of spice too. In the end, there are no rules and it’s all really a matter of preference and taste.

I'm a now retired executive chef living in Texas and I've got a few things to say about Texas BBQ. It's a style of BBQ, a lifestyle, a religion, and to die for. I came out here from Virginia so I'm used to amazing Carolina style pork BBQ (which is amazing in its own right) and the best pork ribs I've ever had came from Buzz and Ned's in Richmond, VA. That all being said, nothing beats Texas Beef BBQ. From simple salt and pepper rub to the choice of Texas post oak for the wood. It's just heaven. Now the one thing I do disagree with Texans on is Turkey. Brined, injected, and rubbed turkey that's then fried in peanut oil is by far and away the best turkey. I was kind of sad that Josh and Ollie mever tried a Texas Twinkie while they were here. Cheers to you and yours Daz.

I'm a S.Texas guy and lived in VA and NC for a number of years. The pork in that area is incredible. They do it ok in Texas but VA and NC really have it nailed.

@@pyroblast3000 More of a subjective opinion than universal fact, so obviously is hyperbole. If you've had the best of one, and just mediocre of the other, objective reasoning has left the building. Personally, when both are done right, it's impossible for me to pick which is better, because it's literally an apples to orange comparison. We are blessed in this country to have some of the best BBQ on the planet. That said, I've had authentic Lamb Gyro in Greece, offset flame cooked Al Pastor in Mexico, and proper Argentinian Asado in AZ of all places. Very different process and flavor profiles, but meat as mind blowing as any smoke BBQ I've ever had.

This isn’t even open for discussion. You’re 100% correct. Beef ribs come off prime rib, the best cut of the cow. (We’ll ignore filet mignon for purposes of this discussion.) Pork ribs come from…well…any old pig.

@@Ira88881 I can't let this discussion be closed with ignorance, so here are the facts. The prime rib roast is at the top of the ribcage. TX BBQ ribs never comes anyhere near prime rib meat unless they are both on you dinner plate. TX ribs are "short ribs" at the bottom of the ribcage, and sits along the brisket. Both have tough connective tissue, and pack huge beef flavor from their high fat content. This meat requires slow and low cooking to become tender, and hits a whole new gear in flavor when smocked. Beef short ribs also come from…well…any old cow, but it's the slow and low smoke that turns them into magic on a stick.

I am absolutely floored that Daz mentioned Tiffany’s. I grew up in Hillside and we used to get the ribs there all the time. They’re pretty tasty. Though Tiffany’s is actually in Union not Hillside, it’s right on the line. Daz has been to Hillside. I can’t stop laughing.

😂 I worked in Hillside. I remember when the hooters first opened up on 22 in union. Managed to be first in on opening day 😂. Was a regular at Vito’s (M&M II) in the center 👍🏻

It seems to me the ladies have just never had "low and slow" bbq done properly. It's very different to what they've tried. They also seem to react negatively to the size of the meat..as if it's "too much". Thing is, once you've had this type of meat done properly you'll never think the same way again. I hope all of you can try this one day in the future.

I am very happy that they went to an actual good bbq place. Terry Black's is considered one of the best bbq restaurants in Texas and or the entire U.S. They really are that dang good. Yes, Shiner Bock was originally made in Shiner, TX but they were bought out. I have tried the beer recently and it doesn't taste the same as when they were still a private company.

When folks review BBQ, they usually only cover little piggie ribs. Which are good, too, but those big beef ribs - most folks agree - "This is the best mouthful of food I've ever had." Many folks order two, get overfed with one and takes the other one home.

Here in the US many families will smoke a Turkey for thanksgiving, and it is divine. Totally different flavor from oven-roasted turkey The gravy made from the drippings of a smoked Turkey is dynamite 🧨

Since deep frying a whole Turkey 6 yrs ago for the first time, it's become a tradition in our family. Not going back to oven baked turkey. lol ;)😉

If you spatchcock the Turkey it comes out even better. It makes both the white meat and dark meat cook evenly. No more dried out breasts or under done dark meat. It's also easy enough to remove the breast entirely and start the dark meat first and then put on the breast. We dont really care about the table presentation we care about getting the bird right.

I'm lucky to live in the midwest with great butcher shops for steaks. But the best meat I've had was when I worked at a hotel when a group of guys from Texas brought me some brisket they made and holy crap, best tasting meat I've had in my life. They do it right in Texas

Yes, it is a Shiner Bock from the Spoetzl Brewery in Shiner, Texas. It is about half-way between San Antonio and Houston.

Yes! It’s a Shiner Bock! I live 10 minutes from the brewery. Definitely worth a visit if you ever get over this way. They opened their own BBQ restaurant and now have a distillery at the brewery, as well! They usually have live music every weekend and you can hang out on the lawn and drink on the patio… So fun!

TEXAS is undisputed king of this style of cooking. Our high quality BBQ will give you religion, guaranteed. I’m a lifelong TEXAN and have eaten this food a thousand times. I live in the middle of the state, hundreds of miles in any direction just to get to the state line!

Brisket came from the Mexican Vaqueros. The cattle ranchers would give them the brisket because nobody wanted it. They learned that by smoking it low and slow turned out a tender and delicious hunk of beef that was enough to feed a dozen hungry Vaqueros.

A large population of Germans settled in Texas before it was part of America. So there’s some old fashioned German influence in the music, beer and food. You can still find some of their descendants that speak old German mixed with Native American and Spanish languages.

My mom doesnt like smoked meat either i LOVE IT. you can have smoked meat that is just completely dried out and i dont like that, but there is meat like this on the video that is suculant and has that proper moisture with the smoked flavors and seasoning. its soooo good

Daz!!! I love Shiner Bock as well. It's brewed at the Spoetzl Brewery in Shiner, TX (population 2,070). It's been brewed there since 1909, and they ship 6 million cases every yesr.

What y'all call BBQ we call grilling. This is how we BBQ. Smoked for long hours over indirect heat. If you ever try it you'll not want meat any other way. Vegetables too!

A lot of people who don't know what they are doing try to fry their turkeys like that and since most turkeys are initially frozen they almost always have some ice in the body cavity. When ice (or water) hits hot oil it basically explodes!

Yes, fresh turkey is a must for fried!!! And, while I love fried turkey - I don't think the leftovers are as good as roasted . . .

@@jwes869 Well that's just it. Every year some number of people who have never done it before and made zero effort to understand what they are doing have a fryer blow up in their face. "...fires related to turkey fryers are responsible for five deaths, 60 injuries and more than $15 million in property damage each year. 'Our recommendation is if you want a fried turkey, order one from a restaurant or grocery store."

@@GodLovesComics Nah...it's easy enough to do just do your research beforehand. We had some dumbass here in Houston decide it was a good idea to fry a turkey on the porch of his second floor apartment. He burned down most of the building.

Shiner Bock is brewed in Shiner Texas. It was originally only available in Texas, but can be found in many states now.

To reiterate what others are saying: grilling is just a method to cook meat (i.e. over direct heat, often from gas or coals). BBQ is a whole style of cooking where meat is smoked “low and slow” (w indirect heat!) for long periods of time. Texas-style BBQ differs from North Carolina, Kansas City, Memphis styles, etc. based on main types of meat used, vinegar vs brown sugar vs mustard sauces, primary side dishes and so on. Also, if you’re eating smoked meats that taste like a bonfire, you’re doing something wrong (or whoever prepared the meat did). 😂

As a Texan I find it amusing the extreme love for Texas food and lifestyle that many of the visitors express and that our citizens take for granted. It's also the basis for confusion between US populations in other areas that that our way of life is well documented and entrenched. We're not having major problems within our state, just with places that want to change us. We're not trying to change anyone, we're not changing for anyone.

Yes. You're right about the beer. It is a Shiner Bock. It's a Texas German brew. Terry Blacks BBQ is simply the best. It all depends on the wood you use for the smoking process as to the flavor of the smoke on the meat.

This restaurant is in my hometown of Austin, Texas. Hands down, we have the best BBQ! I'm so glad they enjoyed it. And yes, that is Shiner Bock.

In Texas most like the plan cornbread and you have to slather it with butter or something since it's so dry. Myself I like sweet cornbread,it's got a touch of sweetness and it's moist rather than dry and crumbly.

BBQ in most places is pork, w/ some chicken and beef brisket sometimes on the menu. Texas BBQ is usually Beef.

Oh you can't beat my state's BBQ!! 😊 Once u try Texas... u will be addicted no matter what country u are from!! I like my BBQ with some sauce. 😋 Brisket is legendary. You can make sandwiches from anything out of BBQ.

I had a friend from Newcastle, England come to my house once during college. My dad made his marinated and smoked brisket, and Paul pulled me aside and told me he didn't really like beef. I told him to just eat one slice so as to not be rude. So then he put a bite in his mouth... Paul ate his WEIGHT in brisket that day! So, no, you don't have to really like meat to appreciate Texas brisket. LOL

Having BBQ for th3 first time, is a life changing experience. I'm a Native Texan, and we can get kinda uppity about our BBQ. I'll just say, if your eating BBQ from any region, your doing something right!!!

As a Truck driver in the U.S. I have tried a lot of BBQ, pretty much from any region that has good BBQ. Been to an All you can eat Tex-Mex BBQ near the Texas - Mexico border

Fried turkey is very common in Texas and I'm sure all over the Southern US. Drunken turkey or chicken. Turduckens, etc. Rednecks are creative!!!

Every time I watch Gaynor and Sophie react to American food, they usually turn up their nose to it! Wonder why their counterparts are SO ENJOYING the food they are eating in the US! Guess it's a good thing Gaynor and Sophie aren't forced to indulge in American food.

BBQ is smoked using wood and water for hours, no matter in which State. What is different about the styles found is in the use of the seasonings and/or the sauces used. Grilling or Cooking Out is what you do when making hamburgers and hotdogs on the grill. It is cooked in relatively short time over charcoal or with propane/butane gas.

Smoked meat only tastes of fire smoke if it's done improperly. Much of it does have a smokey flavor in the background, but it's very clean wood, therefore very clean smoke. Some doesn't really have a strong smoke flavor. You need to taste meat done by a smoke master to really say if you like it or not.

Haha I LOVE when my clothes smell like campfire! Looove smoked meat! Here in North Carolina we have alot of smoked meat restaurants! Sauces are regional too. Sweet tangy smoky flavors in Western NC and vinegar based sauce in Eastern NC. Personally I love the yellow mustard based tangy, smoky sauce in South Carolina!

My ex wife smoked a pork roast while I was working. It smoked a good 4 hrs, it was big enough for 2 1/2 people, my daughter. It was literally the best thing she ever cooked, what a treat to come home to that.

Cajun Fried Turkey is the best. Cooking them has really progressed. I really feel sorry for your friend standing around all day dunking his turkey. Fried Turkey is all my family want to eat now for the holidays. I have two electric turkey fryers. They have been a godsend since they can be used indoors and keep a constant temperature much better than cooking outside in the possible cold weather of November. I inject the bird the night before, take it out in the morning and put on my Cajun rub, heat the peanut oil and cook. In about 45 minutes it is done. Now I actually cook a lot for friends and other family members. So far 8 birds are the most I have cooked over about two days. Fun fact the later birds are a lot more flavorful the the earlier ones because the oil absorbs the flavor of the spices and it cooks into the later birds even more.

Smoking is a skill. Me, my dad and brother have finally got smoking down to where our food tastes good. Only took like 4 years tho. It doesn’t taste like smoke per day but a completely different taste. To fully get the best flavor, you have to go down to the American south.

Texas BBQ can be either a type/style of barbequing or else a BBQ in Texas: there's no set rule that must be followed: it's an ambiguous term. Some of the best BBQ chicken I've ever had was from 'The Texas BBQ' in Pohang, South Korea (the owner basted his chicken with an inexpensive Korean champagne & some spices that included cinnamon). Equally good was the BBQ chicken of a man from Maryland named Kevin Schroeder who used his own blend of many seasonings plus Sweet Baby Ray's Original BBQ Sauce. 😋 As each family in Sweden could have their own family recipe for Swedish Meatballs, same goes for Texas BBQ: you'll likely find variations according to taste, discovery, & experience. Meats are often, but not always slow cooked - & some, but not all may be smoked. Other differences can be found in rubs/spices & sauces used. BTW: Best seasoned taco meat I ever tasted was on the island of Okinawa - made from a Tex-Mex recipe (a U.S. Marine couple taught some locals in 'Kinville' outside of Camp Hansen; some locals now make tacos while others Okinawa-fied the recipe calling it Taco-Rice: a bed of sticky white rice covered with taco-seasoned beef & topped off with shredded cheddar cheese: many Marines love it). 😋

to me texas bbq is brisket pickles diced red onions and lots of sauce between two texas toast with an ice cold big red in a glass bottle, with some texas toast and possibly a baked potato on the side.

My step bro and I went to Dallas Texas a few years ago and we ended up getting chicken wings at some random restaurant and let me tell you them mf was amazing. Never in our life have we had chicken wings that were so thick meaty and delicious.
