Actually calling a Pizza a "pie" or "pizza pie" came from Italian immigrants that came to America in the 1800’s. They called it "pomidore pizza" which translates to "tomato pie", also in the US it was so foreign at the time that we didn’t have anything to compare it to but a pie, and it’s stuck ever since.

Common choices for sauce on pizza : mild pizza sauce, zesty pizza sauce, Alfredo sauce, BBQ sauce or Ranch sauce There are of course other choices, but those are the main choices for pizza even when ordering online they're listed under sauce choice at least in my area of the Midwest. As for St. Louis pixxa being dry, it's not at all! Provel cheese melts ultra smooth and creamy at lower temperatures. The toppingx both float on top of some of the cheese and then nestles down into other parts of the cheese because it melts at such a low temperature and it doesn't easily get too brown and dried out on top before it melts underneath like mozarella does when ones tries to melt it too quickly. So anyway, there's crispy crust and a nice layer of ultra creamy melted Provel cheese.....YUM!!!!!

There is a remarkable difference between eating a slice of pepperoni that has been cooked vs ones that are cured and used on deli Italian sandwiches. Next time you order a pepperoni pizza, save one slice by throwing the box in the fridge, or wrap it in a paper towel so it doesn't get soggy when you store it in a plastic bag. Eat it cold in the morning for breakfast. It's my favorite way to eat a pizza. Especially if it's a pizza that has a sourdough crust that's allowed to get a little tart before it was made.
