A bit of a kerfuffle calling something 'devil's anything' in the turn of the last century. It was from a cooking contest (I have read) & meant to rival the angel's food cake. What we have today is quite a bit different than the bitter sweet cake back then.

Mexican Lasagna Ingredients: 2lbs ground beef 28oz can Tomato sauce 1 can Diced tomatoes and green chillies 1 can red kidney beans 1 7.8oz can sliced olives 1 onion diced small 1 large bell pepper diced small 1 1/2c mushrooms diced. Optional 1 Lrg bag Mexican blend cheese 1/3c Taco seasoning split 4- 12" flour Tortillas (2 cut in half) Directions: Cook ground beef and add half of taco seasoning. Combine all other ingredients except tortillas and cheese in large bowl with remaining seasoning. Layer ingredients in 9x13 pan. Start with mixture then cheese and then tortillas (one whole and 2 halves to create layer). Repeat and finish with mixture layer and cheese. Bake in 350° oven for 25-30min.

Your little helper will be a star someday. Your making this devils food cake from scratch, (plus the frosting), is admirable and a wow from many American cooks/bakers. Even today, most will make that devils food cake from a box mix. Mostl because it is easier, a time saver, and faster gratification wise. Next time you do a two layer round cake, try putting the bottom layer bottom side up on a plate and the top layer bottom side down. Also, depending on the falvor of your cake, (white or yellow cake is the best), try using a jar of fruit preserves in the middle of the layers instead of frosting. Saves the frosting for the top and sides of the cake. Good effort

Just a FYI if using any American recipe that calls for brown sugar it is always packed (pressed)in the measuring cup never loosely. Unless it is by weight measurement.

Can I tell you a little secret - when you make a layer cake - leave the bottom layer "upside down" - so the flat part is on top - that way when you ice it and put the 2nd layer on (flat side to flat side) it will be level..... Only helps with the appearance (and stops any sliding) - but has absolutely nothing to do with the taste and that cake looks delicious!!!! Great Job Elana!!! 🙂👨🍳🥮

I took a cake decorating class, you can use a cake slicer that has a tight sharp wire to cut the top part of the cakes or a good knife to level it. Also put a dab of icing on the cake pedestal and then the bottom cake won’t slide while icing the cake, and another thing it to put ripped strips of wax paper around the cake pedestal and put the bottom cake over the pieces of wax paper and ice the cake. After icing the cake, pull out the strips of wax paper that’s sticking out and you’ll have a clean plate from icing the cake. There’s a narrow icing spatula and an uneven smaller icing spatula for the sides, it’s a smooth rectangular icing spatula and you won’t get lines from using a table knife. And I used a cake crumb brush to sweep off the crumbs before icing it 😁

A nice trick is to slice off the rounded tops of the cakes and place the cut off tops of the cakes facing down before frosting. This will give a nice flat surface to frost and stack the cake. A note the frosting looked kind of light colored, maybe try chocolate fudge frosting next time. The color of the frosting should be close to the color of the cake. German Chocolate Cake has frosting closer to what you showed. How about trying bakers chocolate instead of cocoa powder.

One little hint to make construction easier. Slice the very top (may .5 cm.) of the bottom cake layer to make it flat. You can do the same with the top cake too.

@@Mrhandfriends the secret to not crumbling the cake is to refrigerate the cake over night before frosting it. I realize that is difficult when doing a video, but it will also help the cake to not crumble as easily into the frosting.

Dear Mrs.H, Greetings! First, let me say that I enjoy watching your videos very much. I hope you don't mind a couple of baking tips that are usually part of the instructions and might make a little difference in your baking results... Basically, the wet and dry ingredients should be mixed in separate bowls first, except the milk which is added to the batter last if needed. Sugar, eggs, vanilla and butter are considered "wet". Next, add the pre-mixed dry ingredients to the wet in 1/3 increments. Don't use an electric mixer at this stage, mix by hand and be gentle, this makes the cake more tender and fluffy. Maybe you could make a comparison video to test the results. Happy Baking Ladies!

This looks great! My only suggestion (coming from a biochemist who worked overnights at a bakery during Grad school) is to level off the "dome" of each layer before icing and crumble them. It produces a better cake without too much icing, and you're left with chocolate cake crumbs to decorate the sides.

A couple baking tips. Cut the top off the lower layer so that the top layer has a firm level foundation. (That's the part the chef eats) Also measuring cups and spoons are an art. Flour is measured loosely in the cup, but brown sugar will be either "lightly packed" or "hard packed" into the cups as the recipe directs. Other recipes may call for short measures or heaping measures.

I've been fretting over mentioning the concept of spooning ingredients into measuring cups and spoons, and cutting off the excess, as well as packing brown sugar. :) Mrs. Murphy was our cooking teacher in Jr High and was adamant about such things. It was revolutionary to me. My mother used coffee cups to measure with and her things always tasted great to me, but it takes a long time to be able to eyeball a half and quarter cup in a coffee cup! The things I made never turned out so well as mom's did, until I begged for a set of measuring cups and spoons. :) Mrs. Murphy also insisted we put a wet dishcloth under our bowls before we started, to give them something to cling to. It does make a difference, especially when using a hand mixer, or more to my time, an egg beater. :)

Great job. I know you are getting all kinds of advice and I will give a few. Always crack your eggs in a side dish because the egg might be bad or cracked wrong and have shell bits. It’s easier to discard a bad egg than redo a batter. Leveling flour is loose and scrapped across with a butter knife. Brown sugar is packed, use a spoon or whatever and pack it in. Your little girl was cute in helping.

A little tip when baking any type of bread or cake - as ovens vary with temperature control, you should always undertime by about 5-8 minutes & then check with a toothpick or thin (butter) knife. If it isn't quite done then keep checking every minute or two. You want to get it out of the oven the instant it's done so that the cake (or bread) is moist and not dried out. And yes - when doing a layer cake, bottom layer round side down so that flat side is up, & top layer round side up - flat side to flat side.

Devil's food cake is traditionally (in my neck of the woods) served with a chocolate fudge frosting. Basically as dark as the cake itself. You could also try a genache with 65% (or so) cocoa chocolate and, once it cools, beat air into it to make it more spreadable. Hint: when you are adding eggs do not break them into the batter. Break them into a separate bowl and beat them with a fork 40-80 strokes. Then add the beaten eggs to the batter. This makes for easier and more thorough incorporation. Hint 2: one might try starting the cakes in a cold oven to lessen doming (make sure to grease the sides of the pan, too) or, if heavily domed, slice the dome off to get flatter sections. The domes then become cook snacks. Hint 3: remove the cake when a toothpick inserted in the middle comes out with just a few crumbs, Clean and it is over-cooked, streaky it is under-cooked. Remember, the cake continues cooking after it is removed from the oven so one needs to remove it before it is done. Let it carry over cook for 10 to 15 minutes then remove from the pan to a cooling rack.

Confectioners sugar is casting sugar, is used in baking and candy making as the smaller grains dissolve more easily. Powered sugar or icing sugar is even finer for making butter cream and frosting and for decoration. Icing mixture is powdered sugar with corn flour (starch) for stability. The simplest frosting is icing mixture with just enough water and food coloring to form a spreadable paste

I love watching you cook as a family, be it Mr H or Baby H or all of you. I wanted to mention a tip. When baking I always crack my eggs one at a time into a small bowl or measuring cup to make sure both eggs are ok. That way if one is bloody or bad for any reason you haven't ruined the rest of your ingredients. Also, You need a stand mixer. Do you have a wish list on Amazon?

Likely did overcook it because they tend to be moist and rich. However, does it really matter what you make when you have such a precious little helper? Love how you are making memories. When I was a teenager, my friend and I made a Black Forest cake with vanilla icing. We forgot to grease the cake pans and had to pry the cake out in chunks. Then tried to ice the very dark chocolate cake back together with the white icing. It was the saddest cake you’ve ever seen. But it still tasted good! 😄

Try German chocolate cake. There is not a man under God’s green earth who doesn’t love this cake- absolutely the best icing on earth, and tender chocolate goodness in the cake. Adding a little dissolved expresso powder to the cake batter makes the chocolate in the batter sing out your name!

The cake probably split because it was round on top. They make baking strips (or cake bands) that you soak in water and then put around the edge of the pan. They keep the cake flat on top.

In cake decorating school, we cut the cakes so both layers are flat. And we use hot water to make the icing look like it was molded on the cake.

When I make Devil's food cake, I add a sprinkling of cinnamon, instead of coffee. Also, instead of the sour cream, I add 1 large, heaping tablespoon of mayonnaise.

Any devils food cake I ever had, had dark chocolate for the icing. If you try it again you might want to try chocolate fudge icing.

I cook my roast beef in the Crock Pot (slow cooker) with a cup of coffee, Worcestershire sauce, salt, pepper, onion & garlic powder.

Devil's food cake is the only chocolate cake that I care for. It may be a location thing, but this is the first time I've seen Devil's food frosting without coconut and pecans in it. Elana reminds me of my granddaughters. Adorable. They love to cook also.

I've only seen coconut and pecans on German chocolate cake. But it sounds like it would be good on devil's food, too.

A laundry tip for you and Elana's whites. If you get a food stain on your clothes put dish washing liquid on it. I think y'all call it washing up liquid? The stuff you wash your dishes with. Then just put it in the laundry like normal. This will work with any organic stain including blood.

I have found Milk Chocolate cakes to be more to my liking, not so intense a chocolate flavor as some others, if you want to try one of those also. The buttercream frosting is always wonderful.

I would have cut the domed top the cake to flatten it out. Then use the crumbs to put on the the cake.

Our devil's food cake always had a chocolate glaze instead of icing. It makes it super moist.

Chocolate cake with buttercream frosting (not chocolate buttercream) is my favorite cake!
