You can find good food all over the US but the south excels at comfort food. It may not be the healthiest but each dish is like a hug on a plate. You will want 2nd and 3rds even if you don't have room for it.

Most Southern foods are just farmer fuel. They'd get up early, eat a big meal full of carbs and meat, then work hard all day on it; maybe a smallish lunch. Thing is, we still eat that way even if the hardest thing we do is punch a stapler! Lol

Yeah I have to admit, a tear came to my eye when I saw the other video and that they were calling that dish Biscuits & Gravy. And when I say a tear, it was tears of sadness. I was born in the northern US but my mother was born in the south and came from a long line of southern cooks ... so I am confident in saying that what you had in New Orleans was most definitely indicative of a southern Biscuits & Gravy or as some may say Sausage Gravy. I am so happy that now you know the joy of the real deal rather than a California version.

Yeah, it is like night and day getting biscuits and gravy. The best biscuits and gravy are in the south. Grew up in Pennsylvania and went south twice a year to visit family. I would go down and gain 20-30 lbs in the first day.

I hear this a lot, but I grew up in California, and my mom and her parents were from Oklahoma, and the Appalachias before that. We had homemade biscuits and sausage gravy nearly weekly. We grew up poor, so it was a treat that was still affordable. I still live in California, and even some major chains around here (like Black Bear Diner) do an 'okay' biscuits and sausage gravy, and there are tons of small diners in almost every small town that serve it up old school southern-style, since there were so many southern transplants to California from the Dust Bowl era. I think it's more about knowing where to look, which may be more difficult to non-natives

We have something similar in West Germany. It's called Ragout fin. It's actually leftover food that was eaten in the days after a party. Various leftovers of cooked meat and roast are cooked in a white sauce with champions (or without), with peas and asparagus (or without), but definitely with a dash of white wine and creme, served in puff pastry gratinated with cheese. The noble form is not from leftover meat, its made with veal, pork and chicken. In East Germany they call it Würzfleisch (=spiced meat), they eat it with toast instead of puff pastry, and use only pork.

Half biscuits and half fried breakfast potatoes smothered in sausage gravy. Add a little hot sauce, pure heaven in every bite. Today I make my own sausage gravy over fried potatoes. Great video.

S & B is my favorite breakfast. You should get a side dish of hashbrowns as well and then spoon the extra gravy over it. S & B is super easy to make at home if you buy refrigerated biscuits to bake at home as well. I can only eat S & B on a Sunday morning because a nap is needed afterwards.

I'm from California, too, and we had legit biscuits and gravy frequently. My mom and her parents were originally from Oklahoma, though, and her grandparents were from Appalacia. You'd be surprised how easy it is to find in some parts of the state, especially in the more rural areas like the Central Valley. There are several places in my tiny town that serve legit biscuits and gravy. San Diego, probably a harder ask hehe

@rhequiem oh I totally understand, we can get legit biscuits and gravy here... but their 1st experience was definitely not it 😉 I actually grew up in the Sierra Nevada mountains and that's where I learned to country gravy... then I got hired to transport cars cross country and I got to experience waffle house and stuff. Been to all 48 continental states and most major cities in my 20s.

You guys - this is very easy to make and it's delicious! You actually can just buy Pillsbury Buttermilk biscuits that you pop open and bake!! You guy breakfast sausage (ground - not patties or links) - you brown the sausage in skillet - then you add about a 1/2 cup of flour, salt and pepper - and stir until the sausage is coated with the flour - then you slowly stir in about a cup of milk - until the gravy has thickened!! Taste and salt and pepper to taste if necessary! And there you have breakfast!!! Or homemade biscuits are easy to make too.... Go for it!!

I 'm so glad that you tried biscuits and gravy again. And this time was the more conventional way. Biscuits and gravy have many variations, but this one is the most basic. American biscuit gravy, is made with ground pork breakfast sausage, fried to a crumbled state, then add flour to the sausage ( and all the grease), stir and cook for 2 or 3 minutes, then slowly start adding milk. Keep stirring and adding milk, it will thicken as it cooks. Thicken to your desire, split biscuits, ladle on the gravy, and enjoy. Biscuit gravy demands a lot of black pepper, and a little salt. I like to add red chili flakes to mine. This same gravy goes really well over fried chicken, or chicken fried ( country fried steak). In the US, we have several different gravies, different gravies, ( and different colored gravies) for different meats, from white to dark brown for beef, or ham.I hope you enjoy your culinary adventures while here in the states.

I’ve made biscuits and gravy every Sunday for the last 30yrs, it’s a southern thing, kind of like sweet tea. I’m a native Texan, lived in New Orleans for 5 years. I still think my biscuits are the best, but now when I visit New Orleans I’m there for some of the other foods that are the best in the world. Of course I love my state, and I must brag about our Bar-B-Que the best I’ve ever had. But you must go to the right places for the best, and I see by your videos you’ve gone to some of my favorites.

I'm from the South and it's really easy to make. It's technically a béchamel so it's just equal parts flour and fat. Brown the flour to get the raw cereal taste out, then add the milk and bring it up to temperature. When it gets hot, it will thicken. A word of warning for you, the more you cook the flour (and the more brown it gets), the less thickening power it will have. The sausage is actually an English breakfast sausage so it's the same sausage we fry patties with. Sausages with a casing are typically not used; however, we have made it with fried bologna (cut into small pieces) and even dried beef (S.O.S.).

If you want to make this at home once you return to the UK, it's very simple to make. US Biscuits are basically somewhat like savory scones made with buttermilk, where you mix in tiny chunks of cold butter into the dough to make pockets of air inside the final product. There's a LOT of butter in them. For the sausage gravy, it's quite simple. Get your favorite raw sausage (the more flavorful the better), remove it from the casing and cook it in a skillet. when it's about half done, add a tablespoon of butter, and 2 tablespoons of all purpose flour. You want a roughly equivalent volume of oil from the sausage and butter to flour, as you'll be making a roux. Mix this up and let it cook until the raw flour smell goes away and it gets just a little color. Then you'll add about 1.5 cups of whole milk to the skillet and stir/heat until it is thickened. If you want it thicker, add less milk. Thinner, add more. When it's about done, taste test it then add salt to your preference (you won't need much), and as mush fresh cracked black pepper as you like. Traditionally, we like a LOT of black pepper, but do as you wish. It's that simple.

Southern biscuits are tall, soft and fluffy on the inside, slightly crisp on both top and bottom. Gravy is made with meat drippings. Usually I cook the sausage, then save a couple Pattie’s and break them up into the gravy. Cook the roux until golden then add the milk (canned with a little water is best). Add salt (if needed) and pepper. Then serve with sausage and eggs. Or bacon and eggs. So easy and yet so good.

In the south biscuits & gravy means homemade biscuits, which are easy to make and can be completely done within a half hour (including cook time) when making from scratch and pork breakfast sausage in cream or white gravy with black pepper in it. The gravy is not made with cream, but milk added to the roux which is constituted from the rendered fat of the sausage. It is a delightful meal anyone can make at home and can be found in almost any restaurant in the south that has a breakfast menu.

When they get home to Britain, they probably wont be able to get a good American comparable breakfast sausage. Sausages from other countries use different spice blends, creating different flavors, which could make their gravy very different than ours. I have watched many different videos of foreigners making American biscuits, and they seem to make a lot of Hockey Pucks.

At last! Real biscuits and gravy!😄 I have to say, I'm a native Californian, but Mom was from Oklahoma and a Southern cook for sure. She made biscuits and gravy for the family every weekend. Her biscuits were heaven and I have no idea how she made them - I've never had them like hers anywhere (and she's gone now so I can't ask how she did it!). Plus she would make white gravy from the pan drippings of any kind of breakfast meat - sausage, ham, bacon, pork chops, Spam - anything. I've even seen her make surprisingly good gravy from the drippings of fried bologna! But yeah, I never had decent biscuits and gravy in California outside our home.

I am from New Jersey, we have a melting pot of cultures and cuisines and it’s lovely but it’s no where near what the south has to offer when it comes to dishes like biscuits and gravy. From what I have been told and seen, California is where Spanish and Mexican cuisine are 10/10 in a ton of different ways. I’d love to see you guys try California food trucks! Trying local hot spots as far as tacos and burritos and trying those types of dishes. When it comes to each state in the south, they are going to do something different but better than someone else. Kentucky bourbon vs Tennessee whiskey, Tex mex vs cal mex, Texas bbq vs Louisiana bbq, the vast amounts of desserts In every state. When it comes to locals they definitely know what is best when it comes to food, trust the locals
