It's funny how misplaced people's empathy sometimes is. I get those kinds of comments too when I'm criticizing videogames that are ripoffs or copies. They think "this person tried their best and had good intentions." But I almost think it's more insulting to those people to assume they had good intentions and completely failed from sheer incompetence, than it is to assume they had bad intentions and succeeded.

Arsenic content of rice also depends a lot on where the rice was grown. For example, I eat local West African brown rice (oryza glaberrima), grown here in Ghana, but arsenic levels in the soil here are on average half that of the levels in the USA, so the arsenic levels in our brown rice may actually be lower than that of white rice grown in the USA. Not to mention that arsenic levels in rice in general are trace amounts that really don't matter much unless you're eating kilograms of rice for breakfast, lunch and dinner...

A big advantage of white rice over brown rice is that it stores better. Brown rice turns rancid. That MIGHT have something to do with the worldwide preference for white rice. It's fine when you can sniff it, throw it out, and go to the grocery store and buy another bag. But if your rice has to last until the next harvest, that could matter.

When it's polished you can fit more into a smaller space, which also helps with shelf life, but it was started for transport. The West made the orientals polish the rice for transport to the west. People got used to eating white rice, and that is why many still do.

Once they figured out how to add the B vitamins back, yeah. Everyone is giving an American perspective. 67% higher arsenic doesn't matter when you eat it only occasionally. But in a lot of countries rice is a large amount of daily food intake on top of greater environmental exposure from other sources. It's the cumulative exposure that's most relevant

The dose makes the poison but if arsenic in brown rice is a concern, all one has to do is soak the rice overnight, then pour off soaking water and rinse well. Then, cook the rice like pasta in a pot with salted water. Strain and rinse again. Ready for use, but may need to be heated for the meal. Bonus: rice is even more digestible because of the soaking.

Hello Layne I jave question out of topic but I cant find the answer,.... lets pretend that your liver glycogen had been used during the prolong time without carb intake and your body starting to create glucose via gluconeogenesis from fats and aminoacids ... lets pretend that you go through bodybuilding typical workout when you used some of the glycogen stored in muscles... my question is this ... When you eat a meal after a workout that includes carbs, I dont know lets say 50 grams of carbs ... wil be those carbs stored primarily in liver or in muscles? what does have the priority in storing glucose from food? Thanks a lot and have a nice day.

All the crazies with their fear mongering. Tired of them! Soak your rice if you want to lower the arsenic. Also, get Indian basmati rice instead of rice grown in Texas, Louisiana and, the Gulf Coast where aresenic pesticides were used to control the bowl weevil when cotton was grown there. Brown basmati rice has a nice nutty flavor, especially when you toast it a bit in the pan before cooking. Cook it in stock (beef, chicken, vegetable, garlic, etc.) instead of plain water to enhance the flavor. Do the same if you prefer white basmati.

I think a lot of demonization of certain foods comes down to individual differences in the way we digest them. Back in the day I thought brown rice was healthier, and found it very counterintuitive that white rice seemed to be better for me. Maybe it's the phytic acid, or maybe it's some other aspect of whole grains (none of them make me feel great,) but I'm certainly not going to complain that much better tasting foods such as white rice and white bread are much healthier for me than some of the supposedly healthier stuff I use to choke down 20 years ago. If only ice cream worked that way.
