For really good oven wings start them on a low temp of 225 for 30 minutes then hit them with a high heat of 425 for around 40 minutes. You'll get a wonderful crunchy skin with a juicy flavorful wing

I like to cook them until they're crispy and caramelized then sauce them and then put them back under the broiler to make the sauce all gooey and caramelized then take them out and give them a bit more sauce

One thing for sure...nothing beats deep frying. That's the best way to get the skin crispy enough (without over-drying) so that it stays crispy after getting covered in sauce.

The best way to make wings is to fry them, sauce them, toss em on a hot grill (caramelize first layer of sauce and get grill marks) then toss them in sauce a second time. Also dry brining them before grilling, roasting, smoking is always a great idea.

I smoke mine for about an hour then throw them into the deep fryer for the crispiness you want out of the wings. I don't sauce mine though, I like them dry and then dunk them into the sauce. Otherwise, the sauce starts taking away from the crispy skin.
