I do the same! If you want paintable walls, try reinforcing the corners with braces. Then stretch canvas drop cloths over them. Spray prime then paint what ever scene you want. You can also put spray foam or affix stuff to them. They are pretty durable but a little difficult to store.

I was really going to do this but realized I could just make walls by hanging the plastic sheeting from the ceiling with the bottom weighted down.
