Hey ben..ya the health board did that with me..but they also explained about how the other restaurants set this up but how to pass your home kitchen as one...double sink and a dishwasher( even portable) and steralizable countertop...they actually helped me with the loop holes,,,any food I prep at home like my chili has to have this ,,,if I just sell dogs...I'm good ...really thinking of going back to just dogs again not because of that but just because it was simpler...anyhow another good show ben,,,from canada peace✌🌭🤘

Hey Ben. Any day now the NY Sept of Health will take a look at my basement for a commissary. What questions should I ask. Also what should I tell him so that I can proceed? My goal right now is to get that hot dog cart on the street. But at some point I want to make my own home baked beans and hot mac & cheese. Worried about what the cost will be. But this year I want to make cold pot salad & cold Mac salad for the cart. What should I say and what should I ask? Thanks a million!!!!

Just make sure you tell the prospective restaurants That the be on your insurance. My commissary on my insurance, NY state does allowed any restaurants, bar with 3 bay sink With a health permit To be a commissary

Any concerns with zoning where you are Ben? Did your kitchen require/get a license? I heard you say you're on septic so that would indicate you're in a county and not a city. Cities are very particular about what you do in your neighborhood based on zone designation.

True.. a city zoning may prevent a shared commissary but if its for your own use, they really can't stop you. And yes, the inspector would inspect the commissary too.

Ben you need to come to Vegas.. that's happening this moment.. the state seems to have a problem with street food vendors there coming up with new rules and permits by2024 by July. It's in the News.. commissary is in there.. a commissary letter cost 200.00 and 200.00 a month there after some states mite be fine with that.. but in Vegas it's hard to find a place for your cart.. to many rules. The casino's run this city you can't get close or around them.. and all the other spots are taken with the big food trucks.. so there's a problem with the street food vendors.. see what happens next year..

Ughhh, just found out that in my county you have to own or be part owner of a commissary. That means my trailer will be delayed inorder for me to now work on building my own commissary. Still have to find out all of the regulations for the commissary. Its going to be a longer process but I pushing forward.

I think that if you had a big enough bath room in a basement.. you could convert it to a DIY commissary.. especially if it has a big shower and already completely tiled...there is your sealed floor and drain. Take out the toilet.. and put in all of the sinks. Small prep table and small upright freezer. Range stove top unit, no oven. That would all work for the most part, right? For me I only plan to cut fresh onions and hopefully heat up chili sauce for my dogs. Still trying to work the rest out.

I can officially say you can NOT have your own commissary in Arkansas! I just got an email saying NO! I'm at wits end trying to figure out what to do. We only have one commissary and it's 45 minutes away. Plus a huge fee.

That's what Alabama does now for wording on the commissary agreement, but, they will let you have your own commissary. But, you have to pay health department $100 to take up to 20 days to review the layout plan for the commissary kitchen. And you have to include a separate bathroom and a mop sink and a dedicated hardware sink and a triple sink with a drain board on both sides.

Hey Big Ben! My garage is connected to my breezeway which is connected to my house. My county, town and NYS health dept gave me permission to sell hot dogs, from my cart, beside/next to my house. But HOW can I transform my medium sized garage to my own commissary? My dug in well is on the other side of my property so I have no water or sink in my garage plus I have hard sulphur water. Most states allow you to do that yourself. May still have to be inspected though. However, there are some state codes that require a licensed contractor do it but I've only heard of a couple. Even CA allows you too install yourself. WA and ID don't.

Once you have enough for it to matter a schedule is best. Some commissaries are bigger and can handle more than one at a time. It's something, I'd play by ear.

@@BensCarts I have been reading the Louisiana State code and so far, no - I don't see it in writing. (www.doa.la.gov/Pages/osr/lac/books.aspx). I think I just found the Calcasieu Parish specific Gobbledygook, going to start reading it next. (library.municode.com/la/calcasieu_parish_police_jury/codes/code_of_ordinances). I did notice though, in the state code the words chili and onions are not coming up in the search. Cheese does, looks like they spent some time working on cheese, LOL.

@Russell Wray My commissary never got off the ground. I was really close to submitting my plans to the health dept and the hurricane collapsed my steel building - with my DIY cart in it :-( If your a VU member I published pictures of the destruction on the Ben's NON-Facebook member website. I can tell ya though, the State of LA requires a 1,000 gallon grease trap on your sewer for serving (or servicing a cart) over 50 meals a day. They said they would give me an exemption down to a 500 gallon trap if I serve less that 50 meals a day. I looked it up, it's in the State code like that, so IMO - they weren't doing me any favors LOL

@@BensCarts I called and talked to DHEC about commissary and was told that all I needed was hand washing sink, 3 compartment sink, mop sink. Equipment I needed to cook and prep. Asked about septic and was told as long as I had somewhere to properly dispose of wastewater.

Each inspector will interpret the code differently. I think ya got a good one. As far as I know, SC hasn't changed anything in their codes.

Usually not an issue. There are a few cities who require this although it violates the law unless pizza delivery has to do the same. It's been challenged before and city lost. It's unconstitutional unless every business is required one, including the roofing guy coming to your house to work... he'd be required to bring one with him.

In Wayne County, Michigan, the fee for becoming a licensed commissary is over $1000 a year. Registered commissaries are hard to find because of this. Just going to the local church, VFW, Moose Lodge isn’t enough because generally they aren’t licensed as commissaries either. However, no commissary is letting you register there for free. They know vendors need them so there’s a cost to get them to sign on as your registered commissary.
