Hey Guys,
Today we (My wife and I - EverydayDukan&HealthyEating) are teaching you an easy way to make the famous Bulgarian sauce called Lutenitsa. It is extremely versatile and super tasty. It's healthy too. Packed full of red peppers, tomatoes and a little bit of onion and garlic. Tiny amounts of oil, sugar and salt making it suitable for many diets. For those on Dukan I suggest using sweetener like Stevia or Erythritol.
NOTE * PLEASE WATCH THE ENTIRE VIDEO FOR THE METHOD OF THIS RECIPE!!
The video starts off with roasting the peppers in our summer kitchen. Then preparing the peppers with timelapse videos and music.
Then after that we add more ingredients and a few more cooking / preparation steps.
I will give you the full recipe that we used and then some ideas of how you can use it.
Ingredients (for making 5 jars of 314ml each)
3kg raw ripe red peppers (large and fleshy ones preferably)
(this will become 1200g of cooked peppers after pips and skins removed)
600g peeled chopped tomatoes
1 cup (250ml) finely diced, lightly cooked white onion
36g pickled chopped garlic
1/4 cup(62ml) vegetable oil
1 and 1/2 teaspoon salt
1 and 1/2 teaspoon granulated sweetener (like Erythritol or Stevia)
100ml roasting juices (smoky liquid) OR hot water

Uses for Lutenitsa (the list is actually endless)
Pizza sauce
Pasta sauce
Seafood sauce
Meat ball sauce
Sauce with veggies like : cauliflower & leafy greens
Sauce over fish, chicken, beef, lamb, pork, livers
Instead of condiments like ketchup / mayonnaise
Omelettes, scrambled egg
Spread on toast or sandwiches
Serve with fish cakes or other crumbed dishes
Add to soups like butternut or courgette or tomato
Add to dishes like bolognaise sauce / lasagne
Dip (with veggie crudites or oat cakes)
I hope that you will try this recipe yourself. If it seems a bit too time consuming to do the peppers, then buy some roasted peppers from the shop but when you do that you might not get the deep roasted taste / smell in that case. Sometimes you can buy smoky liquid flavouring that you can add if necessary.

Hi there! Really appreciate your efforts to learn and make popular. Let me give you an advice how to improve your way of processing the peppers, thus saving yourselves some time too: get rid of the stem and seeds before you grill the peppers, while they are yet raw. Just grab the pepper with one hand, grab the stem with the other hand and with your thumb first push towards the part with the seeds towards the inside of the pepper. You may need to repeat turning around the pepper till the stem with the seeds are now separated from the rest. Then pull out. Almost all that you don’t need will be now out. Might need to knock the pepper once or twice with the hole down, so that any remaining seed still has now dropped out. Then you can proceed with grilling and peeling, but won’t need to clean inside. In case it was not clear, just ask your neighbors “как се бушат чушки?” They would surely know. Keep going and good luck!

This isn't "lutenitsa" because you skipped many ingredients and added your own. But as long as you like it, that's what matters! I would love to make your version and try it out for myself! God bless you!

I LOVE lutinitsa! what a long but worthwhile process. Do you put the peppers in hot water to steam?

You burn the skins off, then you put them in a pot altogether and they kind of steam themselves..then you let them cool so you can take the skins off then you slice up the pepper 😃👍🏻

You have made something very modified, but I am not quite sure what it is exactly. But one thing I know - it is not lutenitza. Enjoy it.

There are many different ways to make Lutenitsa... this is our VERSION and the way we like it!!... We have had lots of very positive feedback from our followers... 😄👌🏻... What is YOUR recipe??

There are three main ingredients in the lutenitza and you decided to skip one of them. If it consisted of ten ingredients and you skipped one then it would be barely noticeable, but two out of three... And with the added garlic and onion, it is just not how we Bulgarians do it. That is why I said it was highly modified. But don't get it the wrong way. No judging. Just stating and pointing out in result of what I saw in your video. If you like it without aubergine then have it like this. @@ScotsmanInBulgaria
