Hello! What you said about "toasting" the spices it is truth. My grandmother noticed the difference in the taste of the food when the garlic, oregano and salt were not light fried in oil. We called it "sofreír" in Spanish, and let me tell you, it does make a difference in the smell, taste and even the presentation of the dish. Thanks for sharing all this information!

Same here. I have and use a whole bunch of spices as a South Indian married to North Indian but came here to listen to Sadia's calming voice and explanations. Always love learning why we do what we do. Like why do we use cumin first with oil and cumin powder later in the dish. Great video Sadia, thank you.

Thank you so much for another beautiful video, Sadia. The free download is brilliant - I'm really interested in the benefits of different herbs and spices and this is a great starting point to help with adding them to dishes. For my fellow colorblind friends, you can use apps on your phone to help identify colors, including brightness, of spices to visually check for freshness. I've used apps like this for years to check on dried parsley, basil, oregano, and thyme. Check the color when fresh, and then you can periodically check in to ensure freshness. Smell is usually my go-to for freshness, but you can also have the same benefit as our color-seeing friends with just a little help from technology.

Unpopular practice: I actually use spices for years and years and I've never had throw them away! They do lose some nutrients and flavor, but they are still super aromatic, it's pointless to get rid of them if they didn't go bad. Give them a chance!

Another reason to follow PUL's advice and shop at your local Asian market is that spices are MUCH cheaper there. At grocery stores in the US, we are typically paying a lot for the cute little bottles that have a tiny amount of spice inside. At a nearby Indian market, I can buy peppercorns, cinnamon, cumin, turmeric, cashews, almonds, etc., for far less money than at my general-purpose grocery store.

Herbs and spices are GREAT for the microbiome, too! They are a great way to get additional microbiome-food into your diet when you're still struggling to incorporate fruits and veggies (this is commonly a problem for those with IBS or SIBO). Not to mention adding more flavor can jazz up an otherwise boring or restricted diet. Great and beautiful video- keep up the great work! 🥰

I just read an article the other day wherein it doesn't matter organic, country or spice - in the states, consumer reports just put this out "Your Herbs and Spices Might Contain Arsenic, Cadmium, and Lead" and gave a whole list of grocery stores and brands that are toxic. So, off to the garden I go, planting herbs and will store them by fall - just more work for the consumers

I often see people who are new to cooking or particularly new to certain dishes they make mistakes of adding whole spices to oil too early. When u should actually be putting it when its slightly smoking hot or the ones who are less patient with it then they can use high smoking point oils or ghee. I use to think they will release their flavour with time but its completely different in tastes when they are added in hot oils for release of flavour from adding it in the mid of it. (Ground ones are different cuz they are already roasted and turned powder so, don't add directly to oil u might burn them).

In a waste reducing perspective, if I have an old spice, why don't I still use it even if it's not so aromatic instead of tossing it away as you suggest? Is it harmful in any way?
@PickUpLimes
@PickUpLimes Жыл бұрын
Thanks for asking! While it's true that old spices and herbs may not be harmful to use, they can lose their potency over time and may not contribute the intended flavors to your dishes. However, I appreciate your perspective on reducing food waste, and if you don't mind the potentially muted taste, you can certainly try using them up in your cooking. It's always good to experiment in the kitchen and see what works best for you! 😊

When I was a college student just starting to cook for myself and working with a tight budget, I'd save up to buy a new spice jar once a month or so. Back in those days, I used to love looking at my spice rack and using it as the base and inspiration for whatever I'd cook rather than being driven my larger ingredients. I came up with some interesting combinations that I still love today about 10 years later. So glad the Pick Up Limes team gets this and is spreading the word cause I often find not enough people explore spices as they should. Cinnamon is certainly my #3 spice after salt and pepper too.
