I really like your new way of doing your videos. There's just something about them that I can't explain. I like them better than I do other people's videos. Part of it is you don't try and be perfect about everything, which is nice

Dont be weary, do it for health, i dont do keto but use it as a base for healthy info and it helps. Doctor diagnosed diabetes in 2019 and learning about healthy foods i've been off medication since 2020, following a healthy lifestyle. It works. I follow doctor Eric Berg, victorias keto kitchen, all day i dream about food, joe duff, black sheep keto, keto recipes and having fun, heavenly fan. Have patience with yourself and stay in control of your mind thinking. Today i am much more confident in my keto / low carb baking. I prefer to say low carb yet doing sugar free - low carb and high in 'good- fat. Love, Cape Town South Africa❤

That's the struggle I've had, when I was diagnosed with diabetes. I lost 75lbs from just grabbing pickles to eat. There were some terrific recipes for doughs from ketupgrade. She is a trained pastry chef. I use her dough for straddles to make pop tarts and pot pie that is so good. 🔥

I do need to try some doughs, but I just have kind of been avoiding trying to replicate some things and sticking to just eating food without 'trying to be something else' but its really not working, so I'll have to add some in, I understand she really pushes the fact of the 'science of baking' so things turn out, but I did find she had a lot of ingredients in most of the stuff I looked at of hers, and I've been trying to keep things as simple as possible.. and failing.. hehe :D

We love to turn it into 'lasagne soup' too! if I add a whole lot of rich stock to thin it right out and then drop the lasagne noodles into the liquid, then I serve it in a bowl with the cheese sauce! :D. super good with fresh bread in winter.

The pasta was very good, the texture was great and it was just slightly salty, I do not really like it reheated the next day though, it must have absorbed lots of liquid and the texture was kinda spongey

Definitely going to try the keto pasta - and I totally get why you feel that way about this new way of eating - I’ve always told my lot that as I’m the one who does all the cooking then it’s so important to me that I actually not only enjoy the food but enjoy cooking it (well enjoy might be too strong lol) so if you’re just not then it would - for me anyway - be a struggle but you are doing fab as always 🌟🌟🌟

I will say that the second time we ate the lasagne, the pasta had taken on a lot of liquid and it was almost 'spongey' still tasted fine, but it was much softer and less chew than the first night, definitely preferred it fresh! so I'd prob be inclined to only make a single nights worth at a time, maybe if it was frozen instead of refrigerated and heated straight from frozen...

You should try putting water in one bottle, shake and pour into the second jar, repeat. You’ll add less water total that way.

I generally add stock, and didn't have any to add, so I wasn't overly concerned re the water in this batch, but thankyou! yes, that would work :)

I ended up not fond of the keto flour mix but looking at what I did it is possible that because the psyllium husks were whole not powdered, the quantities and texture might have been off!

@OurSmallFootprint yes, these flour ratios are finicky. We just need to figure it out, lol. All will work out. Make small batches at first, the ingredients are expensive. Perhaps even reducing the oat fibre. I make my own mix with reduced oat fibre, too much oat fibre gave the baked goodies a cardboardy mouthfeel. Yum,I love bolognese sauce. I consider it fairly labor intensive so I make a huge amount at once and freeze it up in meals for 2 portions. As I finish up sautéing my veggies I add a 6 ounce can of tomato purée and sauté it as well. It adds a lot of flavor I think. Then in goes the meat and then the tomato sauce. It pretty much fills up my 6 quart Dutch oven. Kudos to you for making fresh pasta ❤2 types no less😂

Omgosh your Bolognese looks beautiful. The kids bake looks delicious. I love how it sets up. How long do you let it rest after you take it out of the freezer? I know, a silly question, but have you ever froze the kids pasta bake? The keto lasagna looks wonderful. I put it on my menu for this week. I love the ideas you give! The passata looks good. I was reading about it and from what I read it's fresh tomatoes versus the cooked stewed tomatoes in the tomatoes sauce, paste, etc. I'm going to try to find it here. Thank you for another wonderful video!!! ❤❤❤

I have frozen it just as is, we tend to not defrost it, just throw the whole tray in the oven to reheat, I put foil over it initially so it doesn't burn while heating through and then take it off towards the end. It prob takes about maybe 50 minutes from frozen, though I do it in the cast iron which may make the timing a bit longer! I have been known to cut it into portions as well after it has been chilled in the fridge, and then put it in vacuum seal/ziploc bags and freeze it in portions, then can put it in a baking tray covered with foil to reheat in smaller amounts too.

You should look into sweet white lupin flour as well, dont know if its gluten free, but is low carb. I so much want to get some but it is not available in South Africa. Love❤

@OurSmallFootprint have you tried doing micro greens? I've done rocket arugula, spinach and one other green I can't think of the name in micro green trays and I'll be honest I loved it. I don't have much space to do outside gardening besides herbs so doing the micro greens especially the rocket was such a refreshing thing for me.

@OurSmallFootprint ahh I was wondering seed cost there. Here you can get certain greens seeds pretty cheap compared to other seeds. Wondering if you look for bulk "sprout" seeds what kind and price point they have there. You could use some sprout seeds as microseeds

@OurSmallFootprint I use a company called true leaf here in the US. I just looked on their website and although it does say it can be difficult and certain seeds are not allowed at all they do ship to Australia. Maybe give it a look. Idk how costly shipping would be 😬

I use a similar recipe base ( other than the carrots and zucchini - i use mushrooms instead) however instead of the vegetta and soy i use a tblspn of vegemite. I do use worstershire sometimes as well

I would normally use mushrooms if I had them as well! I think there's a bag buried in my freezer but I couldn't find them hehe. I think I used worcestershire too, I normally do! but it wasn't on film :D. I never think of using vegemite, I know it works as an umami flavour though, anchovies are good too!

My partner is gluten free (All so named Daryl 😁) I make him cabbage lasagne he loves it. I also use a milk, cream cheese and egg mix for the white sauce.

There a recipe called fathead dough usually make into pizza but could use for other things seen used for sausage rolls scrolls etc might worth checking out my go to when doing keto

I use psyllium husk in my gluten free bread and if you are using the powder psyllium you only use 85% powder to the husk amount. I was adding the powder to the dry ingredients and then adding wet only to find that the psyllium works best if added to liquid so it thickens the liquid. Who knew? Its like one bog science experience

Yeah, the recipe said powder and it was by cup amount, so maybe if it was powdered instead of husk there would have been a lot more psyllium husk in there and maybe the pasta would have been more like a dough! I liked it enough that I'll give it another go I think.

Hello, maybe next time you could pour the liquid onto the trays before the psyllium action has thickened it, then it might naturally spread itself rather than you having to force roll it out.

That's true! though I'm thinking because the psyllium was volume measured (In cups) if it was powdered before hand, there would be more of it, and therefore it might be more dough like too, I'm going to experiment again, because we did like it!

I like the SOGA brand, the wide based ones, 400mm wide so squatter rather than tall, nice heavy base. The one I was using here is this one amzn.to/3WSylob The paddle was bought for me, so I'm not sure the exact one, but this one seems like it by the measurements! amzn.to/42oo0DK

I think its such a versatile dish, we keep the flavours somewhat neutral, nothing too intense, just rich and tomatoe'y and then can adapt it for whatever we want to eat it with :)

I will say it again. If I had to cook 2 different dinners every day I would lose weight. Because I would be too tired to eat. Both dishes looked delicious. Your sour dough rolls with that sauce! Poor boy’s meatball sandwich. Yum.

I haven't much with the new camera, that might be worthwhile actually, I do most of the thumbnails from screenshots, because I always forget to take photos lol. I'll have to have a look, see if I can make it work!

Woohoo...U should put some sugar in as it cuts down on the Acid from the Tomatoes an old Italian trick also they would of used half of that mince....as that is more Australian recipe...but each to there own...😅😅😅interesting KETO PASTA wonder if U could freeze it for another days meal...😂😂😂❤

I think I used a sprinkle of raw sugar at some point during the tasting, I normally do :). I make it that thick with mince because we dilute it when serving, but its much easier to bag it up really thick, then I add a jar or two of the canned tomato based sauce in to dilute/thin it out make it more saucy. The pasta wasn't so great the second night, I think it absorbed a lot of the liquid and it went kinda spongey, but freezing and heating from frozen might help with that, I'm not sure!

I was able to find the passata here in the NE USA, and to me, it's almost a tomato puree with a bit of salt. I love the bottles but for me, it's much cheaper to buy tomato puree in other forms, usually a 28 ounce can or a #10 can. (.8 liters to 3.16 liters). I can buy them in bulk while the passata is single jar only.

Yes, I don't think Tomato Puree is common here at all, but the passata comes in six packs at Costco, so it works out ok price wise, the Mutti brnad is a little dearer than some of the home brand stuff, but the flavour is much better and I LOVE the bottles for reusing hehe :D

You can make your own passata. It’s used more in Europe and obviously Australia. I like it it’s better than tomato puree.its more like tomato sauce

@olivebobo6885 I’m lazy when it comes to things that need lots of processing to can hehe, I prefer to buy the passata and stick to simple things like salsa for my fresh tomatoes hehe. I don’t have a moulis or anything to remove seeds and skins :)

@@OurSmallFootprint I can buy a huge can of puree for around $6.00 US ($9.60 Australian) and it is equal, in volume, to a little over 4 bottles of passata. Once it is thinned a little, it's probably closer to 5 jars. I make a huge batch of Bolognese and freeze it just like you do. For my little family, one can is enough for at least a dozen meals. I like saving money when I can, I know you get it. 😁

Just wondering can you just take stills of the video as pictures for the website? Idk about that kinda stuff but it does seem silly to me you'd have to do both. Would think you could just take stills of your video at the different stages and use as pictures? Or does video editing not work that way? I honestly don't know😅

Someone else suggested that too, I haven't tried with the new camera! I know that the old camera the quality wasn't great, so when you pulled screenshots out it was a bit meh. I think maybe I might have to up my frames per second too! I do like taking photos with my phone as I go if I remember, framing it with nice backgrounds lol, but yes, I might have to rely on screenshots to keep the momentum going lol.

I could, yes, but the purpose was to try the ketovore diet to see if it helped with my inflammation etc, and giving it a solid go, enough time to see if it was helping kinda thing, persevering at least for a bit hehe, its been about 12 weeks, so I was hoping to give it the 3-6 months worth, but I just don't know if I have it in me :D
