Oh Gina! my mom used to cook this for my dad (special) when he'd come home late from a union meeting...she's Italian, he (was Irish) . Mom is now 103 and living independently in a 55 and older community. I will tell her about seeing this video; she'll get a kick out of it. She grew up in Newark, NJ's Little Italy by Branch Brook Park. Mom now has two Great, Great Grandchildren thanks to two of my Granddaughters Daughters. I made this for my family, I followed her recipe to the letter. A little of this and a little of that, more of this, and some sprinkles of that. My family was in shock! They all asked , how I made such delicious pasta?! Literally I make it once a week. It is fantastic! I add a little chicken or shrimp every know and then with some garlic bread, my family loves it! One of the simplest, most underrated and delicious dishes of Italian cuisine. My mom was Sicilian. Her version had anchovies added to it, an entire oval tin, oil and all. The anchovies would melt and flavor. I never cared for the anchovies but I put in fresh basil and slivers of sun dried tomatoes. You can't go wrong with this dish. Bravo!

I love her, my grandmother lived to 101, God Bless Her. My Primiano family had a farm in Jersey, I grew up eating food that I will never find in the best Italian restaurants. Home made red wine vinegar and hand picked, washed dandelion salad. The meats, chicken and pastas, I could go on,on and on. I'm 71 now and when I watch this wonderful woman cook, I see myself sitting at a family filled table, utensils in hand, mouth watering and love oozing from every pores. Oh yeah,"don't throw coats on the bed, watch the pasta"! Thank you Grandma.

This Nonna returns me to my youth when we had Nonna’s and Zia’s who cooked daily like her. Adding the starch water directly to the cooking oil is new to me. My mom reserved a few cups and added it to the pasta after combining the pasta and ingredients. I will definitely try this Nonna’s method the next time we make it. Meaning, next Friday which is our regular “i maccheroni agli olio night”. For variety, we’ll add shrimp to our dish and instead of parsley, we’ll use fresh chopped basil leaves.. This dish works beautifully with spiralized zucchini too. Thank you Italian Grandma (Nonna)! 🇨🇦

i'm saving this video because 1) i LOVE spaghetti with garlic & oil and 2) she reminds me of my paternal grandmom, who lived with us while i was growing up. she was born in 1905, and lived to be 94. i cried watching this, because although she came to america from sicily at age 11, so her accent wasn't as thick, there was just something about gina that reminded me of her cooking and speaking to us, showing us how to make things, especially on holidays. 💜💜💜

I would put your videos on auto and she'd lay in bed sleeping most of the time near the end, but your voice and familiar accent soothed her soul. I should note, you are one of the few who pronounces ricotta the way we do. I cannot thank you enough for making those videos, Ma would say you are a "real work horse" making all those tremendous recipes we all know and love... @@BuonAPetitti She had alzeimers and I took care of her very well, she was a great cook taught by her gourmet father and taught me, and I extened her life by being there knowing her needs and how to feed her. She's in a better place now, and lived a long and prosperous life well spent, a truly great mother. She really did love you like a friend and felt content with you on her tv. Thanks a million for that and all the work you do. We had seem them all over and over!

This is a delicious dish which I have seen sold in restaurants for $16 or more! I make mine the same way except I 'finish' the pasta in the skillet after draining water. Sometimes when I have sun dried tomatoes on hand, I finely chop a couple of them up and add in. My mom used to throw in a can of anchovies oil and all while dish still piping hot. The anchovies 'melted' into the pasta for a unique flavor. You can get very creative Aglio e Olio!!!!! Bravo!

This video just popped up in my suggestions and I was immediately delighted, and one of the things I most loved is how basic and down to earth the entire production is. No fancy gadgets or $700 pots and pans, no chopping skills that demonstrate just how out of my depth I am even watching the video, no ridiculously obscure or "artisan" or "locally sourced" or "(other words for really expensive)" ingredients. They just dont make em like this anymore. My grandmother is 94 and still insists on doing all of the cooking AND cleanup afterwards. A lot of people who dont understand would probably be outraged, but its her comfort zone, and she honestly wouldnt have it any other way. She literally wont let anyone else do it in her place. I get the feeling this woman has similar qualities. God bless her.

Italians have strict ideas on the best recipe for any pasta dish: _la ricetta di mamma è la migliore, senza dubbio!_ Maybe the thumbs-down people are that way. Personally, I add 2 crushed garlic cloves and 2 dried red peppers to cold olive oil, heat gently for a while then remove all solids before serving with the pasta, a little salty cooking water, parsley, seasoning and grated Gran Padano. Regional traditions can also play a part.

I've made 2 of "Italian Grandmothers" dishes (this one included), and BOTH!! have come out fabulous!!. I trust her and her crew and what she represents here. I have tried both dishes from other recipes and none have come out like hers. She is a blessing!! :) I look forward to making the meatballs recipe!! TY so much. :)

Gina’s warm and happy personality reminds me of my 2 Italian grandmas and she makes all the dishes I grew up with. This spaghetti with olive oil and garlic was one of my favorites that we had on many of our no meat Friday dinners. So good, no meat needed!

Tonight I make this for dinner, Gina! I like a lot of garlic and hot pepper shake! Forgot to add this is good with garlic bread to soak up the sauce

‘Firsta, you put a lil’ a salta’ .... proceeds to pour 1/3 of a cup into her hand. Love it. The water should taste like the sea.

I made this today. I followed her instructions exactly. It was absolutely delicious but I'd bet a thousand bucks that it wasn't half as good as Her's.
