But, you know a day came and ...now I don't like to cook. Cara Gina, my mom, who had dementia, absolutely loved watching your videos. She especially loved to listen to you sing as she recognized some of the songs. Like you, she was a very good cook and baker, and loved to prepare her many wonderful Italian dishes for everyone. Thank you cara Gina, for helping us get Mom through a very difficult time while she was in the hospital, and in long term care for many months. You are a true gift for our family.

Always wait for new recipes from Grandma Gina! Received you Cookbook several months ago and my children appreciate it as much as I do! Live in Northern Mn, not Italian, but love authentic Italian cooking. My husband is from Des Moines, Iowa. Amazingly, there are many Italians in Des Moines! I'm so happy that you shared potatoes and eggs! My grandmother used to make it for lunch for us. Money was scarce but potatoes and eggs were always available. My mother made it and now I make it. Now that the weather has cooled, I've already started to make it. I always think of my grandmother when I make it.Thank you for showing this dish to people who may not be familiar with it. Shout out to Nick's Heroes in the Bronx New York (Morris Park). My favorite sandwich at Nick's was their "Garbage sandwich" ... potatoes, eggs, onions, peppers, and sausage. The owner had three Italian ladies who worked there and they prepared the heroes all day long. It was called a garbage sandwich because basically the Italian ladies (back in Italy) used *_leftovers_* to make the sandwich. They'd scramble some eggs and throw in any leftovers, typically sausages and peppers. Nick's is long gone, but I remembering paying $5.50 or so for a large hero back in the day. I miss those places. Oh, dearest Gina!! It is so wonderful to see you! Aren't the simple recipes the best? Whenever my mother would make fried potatoes (to accompany many different things: eggs, zucchini, pickled peppers, sausage, roasted peppers, etc) my sister and I would tell her to burn the potatoes! We enjoyed them very crispy. Maybe we thought they were more like potato chips! Gina, you look beautiful and so young!!! I'm so happy to see you and to cook with you.
